Chocolate-Beetroot-Cupcakes with Cashew-Chia-Frosting from the Edeka Food Labs Event

last weekend we attended a blogger event by edeka in hamurg, their first "EDEKA FOOD LABS"*. as some of you might know already, we are doing a lot of the pictures for their instagram account at the moment, so we've been really looking forward to meet some of the people, we are usually only mailing with. and the event was so much fun! it started with a wonderful and delicious vegan breakfast at a great vegan restaurant, called HAPPENPAPPEN and then we've been cooking together with all the other lovely bloggers at the vegan culinary school KURKUMA. the talented couple nadine & jörg behind the  gorgeous vegan foodblog EAT THIS! created the recipes for the event - a delicious vegan quinoa burger and these amazing vegan beetroot cupcakes. we really wanted to make a glutenfree version now and it worked out so well! thanks a lot to nadine & jörg for this great recipe and thank you to edeka for this wonderful day in hamburg. if you want to have more impressions from the event, make sure to have a look at this VIDEO*. we hope you enjoy these cupcakes as much as we did!

chocolate-beetroot-cupcakes with cashew-chia-frosting

ingredients for 6-8 cupcakes:

chocolate-beetroot-cupcakes
180g cooked beetroot
30ml rapeseed oil
50g vegan dark chocolate
120g rice flour
100g cane sugar
1 tbsp baking cocoa
1,5 tsp organic baking powder
1/2 tsp cinnamon
1 dash of salt
100ml almond drink
6-8 paper cupcake liners
cashew-chia-frosting
150g cashews (let them soak in water overnight)
1 tbsp coconut oil
50g soja yoghurt
1 tbsp almond spread
2 tbsp maple syrup
seeds of 1 vanillabean
2 tbsp chai seeds

chocolate-beetroot-cupcakes
preheat oven to 180°C top/bottom heat. purée cooked beetroot and rapeseed oil until smooth. melt vegan chocolate in a water bath, then stir in the beetroot-oil-mixture. blend dry ingredients (rice flour, cane sugar, baking cocoa, baking powder, cinnamon and salt) in a mixing bowl, then add the chocolate-beetroot-mixture and almond drink - stir the batter for 1min with a whisk or cooking spoon. line the muffin pan with cupcake papers and fill them with 2tbsp or 3tbsp batter depending on the volume of your cupcake papers/pan (the papers should be 2/3 filled). bake for 20-30min (make the toothpick test to check, when their done).
cashew-chia-frosting
sieve soaked cashews. melt coconut oil on low heat. purée all ingredients (except the chia seeds) thorougly until you have an almost smooth consistence (with an immersion blender it will take 5min). afterwards stir in the chia seeds and fill the frosting into an icing bag with star icing tip. place the frosting in the fridge for 20min before you start decorating the cupcakes. bon appétit!




letztes wochende waren wir bei einem tollen blogger event in hamburg eingeladen - den ersten "EDEKA FOOD LABS"*. einige von euch wissen vielleicht, dass wir momentan viele der bilder für den edeka instagram account produzieren, wir haben uns also sehr gefreut endlich mal einige der leute kennenzulernen, die man vorher nur vom vielen mails schreiben kannte. und das event selbst war solch ein vergnügen! angefangen hat es mit einem köstlichen veganen frühstück im HAPPENPAPPEN, anschliessend haben wir gemeinsam mit den anderen bloggern in der kochschule KURKUMA vegane gerichte zubereitet. das talentierte paar nadine & jörg vom wunderschönen foodblog EAT THIS! hat die rezepte für das event kreiert - einen köstlichen veganen quinoa burger und diese fantastischen veganen rote-beete-schoko-cupcakes. wir haben uns an einer glutenfreien variente versucht und es ist richtig gut gelungen! vielen dank an nadine & jörg für dieses tolle rezept und ein großes dankeschön an edeka für einen wunderbaren tag in hamburg. wenn ihr noch mehr eindrücke vom event sehen möchtet, schaut euch unbedingt dieses VIDEO* an.

rote beete-schoko-cupcakes mit cashew-chia-frosting

zutaten für 6-8 cupcakes

rote-beete-cupcakes
180g gekochte rote beete
30ml rapsöl
50g vegane zartbitterschokolade
120g reismehl
100g rohrzucker
1 el kakaopulver
1,5 tl weinsteinbackpulver
1/2 tl zimt
1 prise salz
100ml mandeldrink
6-8 papier-förmchen
cashew-chia-frosting
150g cashewkerne (über nacht in reichlich wasser einwirken lassen)
1 el kokosöl
50g sojajoghurt
1 el mandelmuss
2 el ahornsirup
mark von 1 vanilleschote
2 el chai-samen

rote-beete-cupcakes
backofen auf 180°C Ober-/Unterhitze vorheizen. rote beete und rapsöl fein pürieren (im mixer oder mit einem pürierstab). vegane schokolade im wasserbad schmelzen, anschliessend unter die rote-beete-mischung rühren. in einer schüssel reismehl, rohrzucker, kakaopulver, weinsteinbackpulver, zimt und salz mischen, dann die rote-beete-mischung und die mandelmilch hinzufügen und mit einem schneebesen oder kochlöffel 1min unterrühren. papierförmchen im muffinblech verteilen und je nach größe der förmchen mit 2el oder 3el teig befüllen (förmchen sollten nur 2/3 gefüllt sein). für 20-30min backen (mit einem holzspiess testen, ob der teig fertig ist).
cashew-chia-frosting
eingeweichte cashewkerne abgiessen. kokosöl bei niedriger hitze schmelzen. alle zutaten (ausser den chia-samen) mit einem mixer oder pürierstab fein pürieren (mit einem pürierstab dauert es etwa 5min). anschliessend chia-samen unterrühren und frosting in eine spritztüte mit sternaufsatz füllen. frosting für 20min in den kühlschrank legen, dann cupcakes verzieren. bon appétit.

butternut squash-sunroot soup with red kale chips & a cozy campfire


a few weeks ago, when the weather was still mild we made a cozy campfire in our lovely neighbors and friends garden. now it's almost winter, the sky is mostly grey and we are already missing the sun and warmer temperaturs. most of all we miss the light at the moment, it's really hard to get all the work and shootings done when the light is already gone around 4pm. we try to wake up even earlier instead but still it seems a lot of time is missing. how do you deal with that? 
autumn is always passing way too fast, so we really enjoy thinking back to this cozy afternoon with our friend rahel at the fire. first we had a herbel tea out of the cutest enamel teapot and then nora made a delicious butternut squash-sunroot soup with red kale chips. we never had red kale before but when we saw it at the organic market we just had to buy it. it tastes a little bit milder then the green one but actually the taste is almost the same. 
we also made some chips out of the sunroot and then grinded some, as we heard on the radio that it gives a special flavor, which is totally true.

ingredients (for 4 persons):
soup:
700g butternut squash
350-400g sunroot
1-2 onion
1 small piece ginger
1,5 tsp curry powder
1 dash chili powder
1/2 tsp turmeric
1 dash nutmeg
500ml vegetable broth
200ml coconut milk
fresh dill (or another herb - depends on your liking)
olive oil
coconut oil (or sunflower oil)
red kale chips:
6-8 leaves red kale (or the common kale)
olive oil
paprika powder
chili powder
sea salt
(optional you can add some grated parmesan)

butternut-squash-soup:
peel and core butternut squash (best with a tablespoon) and dice into small cubes (about 2cmx2cm). clean sunroot with a vegetable brush and wash, then peel the skin off with a vegetable slicer and set aside. cut sunroot also in cubes. chop onions and garlic and fry for 1 minute, then add butternut squash, sunroot and spices and fry for another 2-3min. deglaze with vegetable broth. add some grated nutmeg and ginger to the soup and cook for 15-20min on medium heat until the butternut squash is tender. 
purée soup and add some milk or water, if the soup is to thick. 
hot paprika kale chips:
preheat oven to 180degrees top/bottom heat. wash kale and drain with kitchen paper, cut off the stems. 
rip into bite-sized pieces. blend some olive oil, paprika and chili powder and spread on the the kale (you can also just mix everything in a mixing bowl). place kale on the baking sheet covered with baking parchment and sprinkle sea salt on top (and optional parmesan). bake for ca. 20min - check after 10min once in a while, if they turned already crispy enough. take out off the oven and let cool down on. 
sunroot chips & spice:
fry sunroot skin in coconut oil (or sunflower oil) until crispy, drain extra oil with kitchen paper. grind a few chips to a spice, sprinkle on the soup and garnish with kale and sunroot chips, finish with some fresh dill.

vor ein paar wochen, als das wetter noch milder und freundlicher war, haben wir bei unseren nachbarn und freunden im garten bei einem gemütlichen lagerfeuer zusammengesessen. jetzt ist es schon fast winter, der himmel ist meistens grau und vermissen die sonne, vorallem das viele licht. jetzt wo es jeden tag früher dunkel wird ist es teilweise richtig schwierig die ganze arbeit uns shootings unter einen hut zu bringen. wir versuchen jeden tag noch früher aufzustehen aber die zeit scheint trotzdem nie zu reichen. wie geht es euch mit der zeitumstellung und dem wenigen licht momentan?
der herbst geht jedenfalls immer viel zu schnell vorüber, wir genießen es sehr an diesen gemütlichen nachmittag mit unserer freundin rahel am feuer zurückzudenken. 
erst haben wir einen kräutertee aus einem wunderbaren roten emallie teekessel getrunken und dann hat nora eine köstliche butternusskürbis-topinambur suppe mit roten grünkohl chips gekocht. wir haben vorher noch nie roten grünkohl gegessen bzw. gesehen aber im prinzip schmeckt er fast genauso wie der grüne, vielleicht ein bisschen milder. wir haben auch ein paar topinambur chips gemacht und einige von diesen im mörser zerkleintert, ein tipp den wir vor einiger zeit im radio gehört haben. in dieser form soll ein besonderes intensives aroma entstehen; dem können wir vollzustimmen!

butternut-topinambur-kokos-suppe mit roten kohl-chips

zutaten (für 4 personen):
für suppe:
700g kürbisfleisch
350-400g topinambur
1-2 zwiebeln (je nach größe)
1 kleines stück frischer ingwer
1,5 tl currypulver
1 prise chilipulver
1/2 tl kurkuma
1 prise muskat
500ml brühe
200ml kokosmilch
frischer dill (o. andere kräuter - je nach geschmack)
olivenöl
kokosöl (oder sonnenblumenöl)
rote grünkohlchips:
6-8 stiele roter grünkohl (oder einfach gängigen grünkohl)
olivenöl
paprikagewürz
chilipulver
meersalz
(optional etwas fein geriebener parmesan)

butternuss-topinamabur-suppe:
kürbis schälen, entkernen (am besten mit einem löffel) und in kleine würfel schneiden (etwa 2cmx2xm). topinambur mit einer gemüsebürste putzen und waschen, dann die haut von den topinambur-knollen mit einem sparschäler schälen und beiseite legen. topinambur ebenfalls in etwa gleichgroße stücke wie den kürbis schneiden. zwiebel und knoblauch fein hacken und in olivenöl anschwitzen, dann die den kürbis, topinambur und die gewürze dazugeben und für 2-3 min schön scharf anbraten. mit gemüsebrühe ablöschen und kokosmilch dazugiessen. muskat und ingwer dazureiben und für 15-20min köcheln lassen bis die kürbisstückchen weich sind. suppe pürieren und je nach bedarf etwas milch (o. wasser) dazugeben, falls die suppe zu dickflüssig ist. 
scharfe paprika-grünkohl-chips:
ofen auf 180grad ober-/unterhitze vorheizen.
grünkohl waschen, abtupfen und die strünke heraustrennen. in mundgerechte stücke zerreissen. etwas olivenöl mit paprikagewürz und chilipulver mischen und auf dem grünkohl verteilen (am besten alles in einer großen schüssel mischen). grünkohl auf einem backblech mit backpapier verteilen und mit meersalz (und optional parmesan) bestreuen. für ca. 20min im ofen backen - zwischendurch immer mal prüfen, ob sie schon knusprig genug sind. herausnehmen und abkühlen lassen.
topinambur-chips & gewürz:
topinambur-schalen in kokosfett (oder sonnenblumenöl) ausfrittieren, anschliessend mit küchenpapier abtupfen. einen teil der chips im mörser stampfen und mahlen, topinambur-gewürz über die angerichteten suppenteller verstreuen. mit grünkohl-chips, topinambur-chips und dill garnieren.

autumn breakfast: hemp milk-quinoa-oat porridge with quinces and apple compote & a foodist give away

as autumn is still in full swing we picked quinces in our neighbours garden and apples in our garden to make a delicious compote for this porridge. the smell while nora was cooking was simply divine and in combination with the hemp milk porridge this breakfast is the perfect morning autumn treat. of course you can also use a different milk, that you prefer, but the nutty taste from the hemp milk fits quite perfect with the compote and the seeds and nuts on top. we hope you enjoy this guys!
oh and if you follow us on instagram you might have already seen our new family member. we got collin a week ago and it's such a pleasure to spend time with this little guy. he is so crazy about food and would like to eat everything that he finds…so of course he was also very excited, when we were picking the quinces :) and also in general he likes to have all the attention and tries to jump in almost every picture, that i take. so be prepared to see him here from time to time :)

ingredients (for 2 persons):
porridge:
50g quinoa-flakes
100g glutenfree oats
400ml hemp milk (oder milk, rice milk...)
quinces-apple-compote:
200g quinces (peeled und cored - approx. 2 quinces)
100g apple (peeled und cored - approx. 1 apple)
250ml water
60g sugar
1/2 vanilla bean
1tsp cinnamon
1 dash clove
2 tsp cornstarch (approx.)
topping:
1 handful "munchy seeds" (consists of sunflower-, pumpkin- and hemp seeds)
1 handful "holy snack" (consists of coconut flakes, raisins und cashews)
1-2 tsp cacao nibs

peel, core and dice quinces and apples (small info: work quickly, because the quinces turn quite fast brown, when they are peeled). caramelize the sugar in a medium sized saucepan, then deglaze slowly with the water. stir in the vanilla pulp, scraped vanilla bean, cinnamon and clove. add the quince and apple dices and boil with lid on top for 5min until fruit is soft. fill quince and apple dices in a sieve and boil juice again - remove vanilla bean. thicken the juice with the cornstarch - for this mix 3 tbsp juice with the cornstarch in a glas or small bowl, then stir into the juice in the saucepan. add fruit pieces.
boil quinoa- and oat flakes together with the hemp milk for 3-4min. fill first the compote, then porridge into pretty glasses or breakfast bowls. top with some healthy delicious stuff: we sprinkled our quinoa-hemp-porridge with "munchy seeds", "holy snack" and for me (nora) also with some cacao nibs. bon appétit!

aber jetzt zum rezept: der herbst zeigt sich immernoch in voller pracht und so konnten wir gestern im garten unserer nachbarn quitten pflücken und dazu ein paar äpfel aus unserem garten. wir haben aus den beiden leckeren herbst-früchten ein kompott gekocht. der geruch während des kochens war einfach himmlisch und in kombination mit dem hanfmilch porridge ist es ein wahrer herbstgenuss. natürlich könnt ihr für den porridge auch gerne andere milch verwenden, aber der nussige geschmack der hanfmilch passt wirklich wunderbar zum kompott und den samen und nüssen on top. wir hoffen ihr lasst es euch schmecken! 
oh und wer uns auf instagram folgt, hat vielleicht schon unser neues familienmitglied gesehen. 
wir haben collin vor einer woche bekommen und es ist einfach herrlich zeit mit ihm zu verbringen. 
er ist ziemlich verrückt nach essen und würde am liebsten alles futtern was er nur finden kann…natürlich hatte er es dann also auch auf unsere quitten abgesehen :) und sowieso versucht der kleine dauernd unsere aufmerksamkeit zu erhaschen und würde am liebsten auf jedem bild mit dabei sein. ihr werdet ihn ab jetzt also sicher noch öfter sehen :)

quinoa-hafer-porridge mit hanfmilch & quitten-apfel-kompott und ein leckeres foodist-give-away
zutaten (für 2 personen):
porridge:
50g quinoa-flocken
100g glutenfreie hafer-flocken
400ml hanfmilch (oder milch, reisdrink...)
quitten-apfel-kompott:
200g quitten (geschält und entkernt - ca. 2 stück)
100g apfel (geschält und entkernt - ca. 1-2 stück)
250ml wasser
60g zucker
1/2 vanilleschote
1tl zimt
1 prise nelkengewürz
etwa 2 tl maisstärke
topping:
1 handvoll "munchy seeds" (besteht aus sonnenblumen-, kürbis-und hanfsamen)
1 handvoll "holy snack" (besteht aus kokosflakes, rosinen und cashews)
1-2 tl kakaonibs


quitten und äpfel schälen, entkernen und würfeln (kleine info: zügig arbeiten, denn quitten werden sehr schnell braun, wenn sie geschält sind). zucker in einem mittelgroßen topf karamellisieren, dann langsam mit wasser ablöschen. vanillemark, ausgekratzte vanilleschote, zimt und nelkengewürz einrühren. quitten-und apfelstückchen dazugeben und mit geschlossenem deckel 5min köcheln lassen bis die stückchen weich sind. quitten- und apfelstücken in ein sieb geben und den saft nochmals aufkochen - vanilleschote entfernen. zum eindicken 3 el saft abnehmen und mit der maisstärke verrühren, dann wieder unter den saft im topf rühren. obststückchen dazugeben. quinoa- und haferflocken zusammen mit dem haferdrink aufkochen und bei stetigem rühren 3-4min köcheln lassen. in schöne gläser oder schüssel zuerst kompott, dann porridge füllen. mit gesunden und leckeren toppings bestreuen: wir haben unseren quinoa-hanf-porridge mit "munchy seeds", "holy snack" und für mich (nora) kakao-nibs veredelt. bon appétit!

glutenfree and vegan banana pancakes // all time favorite


we thought, that it´s really about time to share our all-time favorite pancake recipe on the blog.
we post so many pancake pictures on instagram and we eat these vegan and glutenfree banana pancakes at least once a week :)
the topping always changes: this time we ate them with figs, but of course all kind of fruits, especially berries, taste delicious  with the pancakes.
what i really like about the recipe is, that it´s glutenfree and vegan. i think, it can be quite challenging sometimes to combine those two, but in this case it´s very easy and it works perfectly. because we are already in a christmas-mood (don´t blame us, it´s never to early for chrismas, right?!) we added a little bit gingerbread seasoning, but of course you can leave it or exchange it with cinnamon.

it was a beautiful morning light on that day, so i just couldn´t resist and took these pictures very qick and spontaneously
(that´s why there are just 3!), because everyone was hungry and wanted to eat :D 


so here you go for the recipe:

glutenfree & vegan banana pancakes

2 ripe bananas
50-100ml rice milk
100g rice flour
1 tsp tartan baking powder 
1/4 tsp gingerbread seasoning (or just cinnamon)
1 dash of salt
coconut oil
maple syrup
figs or other fruits

mash the bananas with a fork in a soup plate and stir in the milk (better start with 50ml milk and add later some more, if the dough turns out to be a bit to firm).
mix in a separate bowl the rice flour, baking powder, gingerbread seasoning and salt. add the banana-milk-mix to the bowl and stir thorougly with a tablespoon. heat some coconut oil in an iron pan and create pancakes with a tablespoon (each pancake is a full tablespoon of dough - use the tablespoon-back to flatten the pancake-dough). because the dough is egg-free, the pancakes are a bit more unstable then regular pancakes, so be a bit careful, when you flip them. cook every side for about 2min on medium heat until they look crispy. serve warm with fresh fruits like figs and maple syrup.

wir dachten es ist mal langsam an der zeit unser allerliebstes pancake rezept mit euch zu teilen.
wir posten so viele pancake bilder auf instagram und essen diese veganen und glutenfreien bananen-pancakes mindestens einmal die woche :)
das topping variiert immer. dieses mal waren es frische feigen, aber natürlich schmeckt jedes obst und besonders gut natürlich beeren dazu.
was ich an dem rezept besonders mag, ist das es glutenfrei und vegan ist. eine kombination die nicht immer unbedingt die einfachste ist, in diesem fall aber zum glück sehr gut gelingt!!
weil wir schon in weihnachtsstimmung sind (dafür ist es unserer meinung nach nie zu früh!) haben wir ein bisschen lebkuchengewürz zum teig hinzugefügt. das kann man aber natürlich je nach belieben weglassen oder z.b. durch zimt ersetzen.
als die bilder entstanden sind, waren wir gerade mit unserer freundin ezgi auf dem land. ein wunderschönes morgenlicht schien durchs fenster und ich konnte einfach nicht anders, als schnell ein paar foto zu schießen. weil allerdings zwei (drei) ungeduldige, hungrige mäuler gewartet haben, gibt es heute mal nur drei bilder. 
und jetzt nichts wie los zum rezept:

glutenfreie und vegane bananen-pancakes

2 bananen
50-100ml reismilch
100g reismehl
1 tl weinsteinbackpulver 
1/4 tl lebkuchengewürz (oder einfach zimt)
1 prise salz
kokosöl
ahornsirup
feigen oder andere früchte

die bananen in einem tiefen teller mit einer gabel zerdrücken und die milch unterrühren (lieber mit etwas weniger milch anfangen und später, falls die konsistenz des teigs zu fest ist, noch etwas unterrühren). in einer separaten schüssel mehl, backpulver, lebkuchengewürz und salz miteinander vermischen und anschliessend den bananen-milch-mix untermischen und gut mit einem esslöffel verrühren. in einer eisenpfanne etwas kokosöl zum schmelzen bringen und bei mittlerer hitze mit einem esslöffel den teig zu kleinen pancakes portionieren,  2min von jeder seite knusprig anbraten lassen. da die pancakes ohne ei sind, sind sie etwas instabiler, deswegen etwas vorsichtig beim wenden sein. lecker dazu sind frische früchte (in unserem fall feigen) und natürlich ahornsirup.

this summer was crazy. first of all we already had redcurrants in the garden when they were not ripe yet everywhere else. then the plums were ripe way to early and now the apples are. they were already falling from the trees 2 weeks ago!! i have no idea what is going on, but i don´t mind. it´s never to early for apples! so we baked three apple cakes last weekend and the first one we will show you today: a glutenfree & vegan apple pie.to be honest: laura risk her neck for one particular picture (i guess you know which one) and no, she was not climbing on an apple tree (almost). it was just a ladder, but a really dangerous one!! you know, those ladders which are always shaking and you are in fear all the time standig on it...but she is a brave girl, so she made it and i´m glad that my girlfriend is still alive (i was holding the ladder so strongly you can´t believe!) 
but to speak about the apple pie again: i guess it was the best reward to have a delcious piece of it after this dangerous shooting :D 
due to the glutenfree flour the pie is a little bit crumbly from the outside, but very juicy inside. we hope you enjoy!



apple pie (for a 18cm ø springform)
dough
300g glutenfree flour (150g rice flour + 150g buckwheat flour)
3 el sugar
160g cold butter or margarine
5el ice-cold water
1 dash of salt
filling
400g apples (peeled)
150g cane sugar
3 tbsp cornstarch
1-2 tsp cake spices (e.g. from sonnentor with vanilla, cinnamon, cloves, ginger)
2-3 el juice (e.g. apple juice, currant juice…)

put sugar and salt into a bowl, sieve the flour into the bowl and add the cold butter (cut first into small cubes).
stir everything with the dough Hoods vor a White. add the ice-cold water and stir again until the dough gets smooth. knead the dough at the end for a minute. cover the dough with clingfilm and leave it for at least 1 hour in the fridge. prepare the filling: peel the apples, cut into wedges and put into a bowl. add sugar, juice, cake spices and cornstarch, mix everything and leave to infuse the apple wedges. preheat fan oven to 180degrees. line the springform base with baking paper and grease the sides. take about 300g from the cold dough and roll it on a floured countertop. line the rolled dough on the base and sides of the springform (don't spread the dough completely to the top of the sides). pre-bake the dough-base for 10min at 180degrees. meanwhile roll the left part of the dough and cut with a pastry-wheel or knife 1,5cm thick stripes. take the springform out off the oven, fill with apple wedges and built the top out of the dough-stripes. verstärken
toughen the upper edge of the cake with some extra thin stripes of dough. bake the cake for 40-45min at 180 degrees. leave the cake cool down for 20min before removing the springform and leave completely cool down on a cooling rack. mix icing sugar with a bit water and spread a bit icing with a pastry brush on the top of the cake.

dieser sommer war wirklich verrückt. erst waren die johannisbeeren in unserem garten reif, da gab es sonst noch nirgends johannisbeeren, dann kamen die pflaumen viel zu früh und jetzt sind schon vor zwei wochen die ersten äpfel von den bäumen gefallen. aber wenn ihr uns fragt: es ist nie zu früh für äpfel!! wir haben letztes wochenende schon 3 apfelkuchen gebacken und den ersten zeigen wir euch heute: einen glutenfreien und veganen apple pie.
um ehrlich zu sein: laura hat kopf und kragen für das erste bild  riskiert und nein, sie ist nicht auf einen apfelbaum geklettert (fast). es war zwar nur eine leiter, aber eine ziemlich wackelige...ihr könnt es euch vielleicht lebhaft vorstellen. aber laura war zum glück mutig genug und ich war mehr als froh als meine freundin wieder boden unter den füßen hatte (ich habe noch nie so fest eine leiter gehalten).
aber um zum apple pie zurück zu kommen: ein leckeres großes stück davon war wohl die beste belohnung nach diesem gefährlichen shooting :D 
wegen dem glutenfreien mehl ist der pie von außen etwas bröckelig, von innen dafür aber sehr schön saftig. wir hoffen er schmeckt euch genauso gut wie uns!


veganer glutenfreier apple pie (für eine 18cm ø Springform)
teig
300g glutenfreies mehl (150g reismehl + 150g buchweizenmehl)
3 el zucker
160g kalte butter oder magarine
5el eiswasser
1 prise salz
füllung
400g äpfel (geschält)
150g rohrzucker 
3 el speisestärke
1-2 tl kuchengewürz (z.b. von sonnentor mit vanille, zimt, nelken, ingwer)
3 el saft (z.b. apfelsaft, johannisbeersaft…)

Zucker und salz in eine schüssel geben , das Mehl dazusieben und die kalte Butter in kleinen würfeln dazugeben. mit den knethaken gut vermengen. das eiswasser hinzufügen und weiterführen bis ein glatter Teig entstanden ist. zum Schluss kurz mit den Händen kneten. Teig in Folie wickeln und im Kühlschrank für min. 1h kalt stellen. die Füllung vorbereiten: äpfel schälen, in spalten schneiden und in eine schüssel geben. den Zucker, Saft, Gewürz und die speisestärke hinzufügen und alles gut vermengen und etwas durchziehen lassen. ofen auf 180grad umluft vorheizen. Springformboden mit backpapier auslegen, Ränder buttern. etwa 300g des Teigs aus dem Kühlschrank nehmen und mit einem kuchenholz auf einer bemehlten arbeitsfläche ausrollen. den boden und die Seiten (nicht ganz bis oben) der Springform damit auskleiden. für 10min den boden vorbacken. währenddessen den übrigen Teig ebenfalls ausrollen und mit einem teigrädchen oder messer 1,5cm breite streifen zuschneiden. boden aus dem ofen nehmen, mit apfelspalten füllen und die decke aus teigstreifen bauen. den oberen äusseren Rand des Kuchens nochmals mit schmalen teigstreifen verstärken. für 40-45min bei 180grad backen. 20min abkühlen lassen, und anschliessend auf einem kuchengitter komplett auskühlen lassen. ein bisschen Puderzucker mit wasser vermischen und mit einem Pinsel oder Teelöffel eine dünne Zuckergussschicht auf der Oberseite verteilen.
