Scally's SuperValu launch Ireland's 1st designated supermarket in-store Gluten-Free Bakery

Scally’s SuperValu, located in the heart of Clonakilty in West Cork, has become the first supermarket in Ireland to launch a designated in-store gluten-free bakery and food production facility. The new facility, with an investment of €500,000, will create five new jobs at the store.


Coeliac disease is an auto immune disease causing some adults and children to react to gluten, the protein found in wheat, barley and rye. Some coeliacs are also sensitive to the protein found in oats. If a coeliac eats gluten the lining of the small intestine becomes damaged reducing the coeliac's ability to absorb the nutrients from food. This can lead to various symptoms and complications if undiagnosed. The only treatment is adhering to a gluten-free diet for life after a positive diagnosis has been made.

Gluten is found in breads, biscuits, cakes, pasta, beer, pizza and in many manufactured foods where gluten is contained in the ingredients such as soups, sauces, gravy, salad dressings, crisps, chocolate, sweets and ready-meals. Coeliacs have to think ahead if they want to eat at a restaurant, need to take extra time reading labels when shopping and need to take care in their personal food preparation to avoid cross-contamination with gluten. Even a grain of gluten can cause harm and cause symptoms which can last for several days. Long-term consequences of coeliac disease if left untreated, can include increased risk of bowel cancer, infertility and osteoporosis.

The ‘Clonakilty Gluten Free Cuisine’ range, which consists of a selection of almost 30 gluten-free products certified for coeliacs, will be available at Scally’s SuperValu Clonakilty and Scally’s SuperValu Blackrock in Cork city, with future expansion plans expected. As this innovative range is prepared in a separate bakery and kitchen, coeliacs can be assured that the range is 100% gluten-free, with all products independently tested and certified by Alpha Analytics.

Speaking at the launch, Eugene Scally, owner of Scally’s SuperValu said, “1 in 100 people in Ireland are thought to have coeliac disease, with many as yet undiagnosed. The decision to develop this range was made after market research highlighted the lack of choice for coeliacs and the high cost of gluten-free products; research showed that a coeliac’s basket of goods is 87% more expensive than a non-coeliac basket. We wanted to offer customers a diverse gluten-free range that was keenly priced and of exceptional quality. Our customers feedback has been instrumental in developing the range and the response from shoppers has been extremely positive.”


The launch highlights SuperValu’s community retail model as stores are independently owned and retailers can tailor their offer for the local area. The state of the art production facility means that the gluten-free range can be produced locally in West Cork and adds to West Cork’s reputation for food leadership. The launch of ‘Clonakilty Gluten Free Cuisine’ follows the launch last year of SuperValu’s FreeFrom range which consists of over 300 gluten and dairy-free products, already in all SuperValu stores.

Chairperson of the Coeliac Society of Ireland, Mary Twohig said: “We are delighted that Scally’s have developed this facility in Cork, giving coeliacs more choice in their search for gluten-free foods, on a local basis. It is important to coeliacs that they can access a range of products that are affordable and good quality. With 15% of our membership being from Cork, it is fantastic to see local businesses, and a national retailer, rising to meet the needs of people whose only medicine is a gluten-free diet.”

glutenfree & vegan apple pie








































this summer was crazy. first of all we already had redcurrants in the garden when they were not ripe yet everywhere else. then the plums were ripe way to early and now the apples are. they were already falling from the trees 2 weeks ago!! i have no idea what is going on, but i don´t mind. it´s never to early for apples! so we baked three apple cakes last weekend and the first one we will show you today: a glutenfree & vegan apple pie.to be honest: laura risk her neck for one particular picture (i guess you know which one) and no, she was not climbing on an apple tree (almost). it was just a ladder, but a really dangerous one!! you know, those ladders which are always shaking and you are in fear all the time standig on it...but she is a brave girl, so she made it and i´m glad that my girlfriend is still alive (i was holding the ladder so strongly you can´t believe!) 
but to speak about the apple pie again: i guess it was the best reward to have a delcious piece of it after this dangerous shooting :D 
due to the glutenfree flour the pie is a little bit crumbly from the outside, but very juicy inside. we hope you enjoy!



apple pie (for a 18cm ø springform)
dough
300g glutenfree flour (150g rice flour + 150g buckwheat flour)
3 el sugar
160g cold butter or margarine
5el ice-cold water
1 dash of salt
filling
400g apples (peeled)
150g cane sugar
3 tbsp cornstarch
1-2 tsp cake spices (e.g. from sonnentor with vanilla, cinnamon, cloves, ginger)
2-3 el juice (e.g. apple juice, currant juice…)

put sugar and salt into a bowl, sieve the flour into the bowl and add the cold butter (cut first into small cubes).
stir everything with the dough Hoods vor a White. add the ice-cold water and stir again until the dough gets smooth. knead the dough at the end for a minute. cover the dough with clingfilm and leave it for at least 1 hour in the fridge. prepare the filling: peel the apples, cut into wedges and put into a bowl. add sugar, juice, cake spices and cornstarch, mix everything and leave to infuse the apple wedges. preheat fan oven to 180degrees. line the springform base with baking paper and grease the sides. take about 300g from the cold dough and roll it on a floured countertop. line the rolled dough on the base and sides of the springform (don't spread the dough completely to the top of the sides). pre-bake the dough-base for 10min at 180degrees. meanwhile roll the left part of the dough and cut with a pastry-wheel or knife 1,5cm thick stripes. take the springform out off the oven, fill with apple wedges and built the top out of the dough-stripes. verstärken
toughen the upper edge of the cake with some extra thin stripes of dough. bake the cake for 40-45min at 180 degrees. leave the cake cool down for 20min before removing the springform and leave completely cool down on a cooling rack. mix icing sugar with a bit water and spread a bit icing with a pastry brush on the top of the cake.

dieser sommer war wirklich verrückt. erst waren die johannisbeeren in unserem garten reif, da gab es sonst noch nirgends johannisbeeren, dann kamen die pflaumen viel zu früh und jetzt sind schon vor zwei wochen die ersten äpfel von den bäumen gefallen. aber wenn ihr uns fragt: es ist nie zu früh für äpfel!! wir haben letztes wochenende schon 3 apfelkuchen gebacken und den ersten zeigen wir euch heute: einen glutenfreien und veganen apple pie.
um ehrlich zu sein: laura hat kopf und kragen für das erste bild  riskiert und nein, sie ist nicht auf einen apfelbaum geklettert (fast). es war zwar nur eine leiter, aber eine ziemlich wackelige...ihr könnt es euch vielleicht lebhaft vorstellen. aber laura war zum glück mutig genug und ich war mehr als froh als meine freundin wieder boden unter den füßen hatte (ich habe noch nie so fest eine leiter gehalten).
aber um zum apple pie zurück zu kommen: ein leckeres großes stück davon war wohl die beste belohnung nach diesem gefährlichen shooting :D 
wegen dem glutenfreien mehl ist der pie von außen etwas bröckelig, von innen dafür aber sehr schön saftig. wir hoffen er schmeckt euch genauso gut wie uns!


veganer glutenfreier apple pie (für eine 18cm ø Springform)
teig
300g glutenfreies mehl (150g reismehl + 150g buchweizenmehl)
3 el zucker
160g kalte butter oder magarine
5el eiswasser
1 prise salz
füllung
400g äpfel (geschält)
150g rohrzucker 
3 el speisestärke
1-2 tl kuchengewürz (z.b. von sonnentor mit vanille, zimt, nelken, ingwer)
3 el saft (z.b. apfelsaft, johannisbeersaft…)

Zucker und salz in eine schüssel geben , das Mehl dazusieben und die kalte Butter in kleinen würfeln dazugeben. mit den knethaken gut vermengen. das eiswasser hinzufügen und weiterführen bis ein glatter Teig entstanden ist. zum Schluss kurz mit den Händen kneten. Teig in Folie wickeln und im Kühlschrank für min. 1h kalt stellen. die Füllung vorbereiten: äpfel schälen, in spalten schneiden und in eine schüssel geben. den Zucker, Saft, Gewürz und die speisestärke hinzufügen und alles gut vermengen und etwas durchziehen lassen. ofen auf 180grad umluft vorheizen. Springformboden mit backpapier auslegen, Ränder buttern. etwa 300g des Teigs aus dem Kühlschrank nehmen und mit einem kuchenholz auf einer bemehlten arbeitsfläche ausrollen. den boden und die Seiten (nicht ganz bis oben) der Springform damit auskleiden. für 10min den boden vorbacken. währenddessen den übrigen Teig ebenfalls ausrollen und mit einem teigrädchen oder messer 1,5cm breite streifen zuschneiden. boden aus dem ofen nehmen, mit apfelspalten füllen und die decke aus teigstreifen bauen. den oberen äusseren Rand des Kuchens nochmals mit schmalen teigstreifen verstärken. für 40-45min bei 180grad backen. 20min abkühlen lassen, und anschliessend auf einem kuchengitter komplett auskühlen lassen. ein bisschen Puderzucker mit wasser vermischen und mit einem Pinsel oder Teelöffel eine dünne Zuckergussschicht auf der Oberseite verteilen.

glutenfree red currant cake with almonds


sundays are made for cake, don´t you think so? 
here you go for a delicious glutenfree red currant cake with almonds. 
we already made that cake last week and actually we also wanted to photograph it for the blog...but we almost finished the whole cake before we had the chance to take some pictures...oops! :D
so this was our second try and finally it worked. we almost ate the whole cake again, but this time after photographing...smart, right?!
almonds and sometimes also cashews are the only nuts laura can tolerate - at least there are some! Does anyone of you guys can tolerate almonds as well, even with a histamine intolerance? 
anyways, we hope you enjoy this cake! happy sunday guys!

recipe
dough

180g redcurrants (best frozen)

160g cane sugar

40g slivered almonds

140g butter (room temperature)
2 small eggs (room temperature)
0,5 vanilla bean
140g glutenfree flour (70g buckwheat flour + 70g rice flour)
1 tl tartan baking powder
almond brittle & garnish
3-4 el sugar
50g slivered almonds
100-125g icing sugar
1 handful fresh redcurrants

preheat oven to 180degrees (top-/bottom heat). mix butter and sugar, stir egg after egg in the mix and the pulp of the vanilla bean. mix the flours and tartan baking powder in a separate bowl. sieve and stir in the mix in 3parts to the butter-sugar-egg-mix. stir in the slivered almonds. grease a rectangular loaf tin, line it with baking paper and spread on the base and sides a circa 1cm-thick layer of the dough. mix the rest of the dough with the redcurrants and fill the dough into the loaf tin. bake the cake at 180degrees for 60-65min. let it cool down for 20min and take it off the loaf tin and let it cool down completely on a wire cooling rack. mix the icing sugar with 1-2 tbsp milk until it's viscous and spread the icing on the cake by using a tablesoon. prepare the almond brittle: lay out ready 2 bigger pieces of baking paper. add the sugar to a pan or pot and let it liquify on middle heat. then add the slivered almonds and spread the mix with a tablespoon very quick on one of the baking papers. create sugar-threads: take with the backside of a tablespoon a bit of the remained sugar from the pan/pot and create sugar-threads by moving the spoon back and for above the second baking paper. let the brittle and threads cool down and break into pieces for decorating. arrange some almond brittle and fresh berries on the cake.

was wäre ein sonntag bloß ohne kuchen?! laura und ich lieben es sonntags kuchen zu essen, sei es morgens, mittags oder abends, zu irgendeiner tageszeit überkommt uns ein hieper.
heute haben wir also diesen leckeren glutenfreien johannisbeeren kuchen mit mandeln für euch.
eigentlich hatten wir den schon letzte woche gebacken und wollten ihn auch gleich für den blog fotografieren, aber so weit kam es erst gar nicht....der kuchen war nämlich schon so gut wie weggefuttert bevor er auch nur die chance hatte vor die linse zu kommen. oops :D 
aber es gibt schlimmeres als einen leckeren kuchen ein weiteres mal backen zu müssen und diesmal haben wir es auch geschafft ihn erst zu fotografieren und dann zu essen. ziemlich schlau, oder?!
mandeln und in kleinen mengen auch cashews sind übrigens die einzigen nüsse die laura gut verträgt - immerhin besser als gar nichts! wie sieht das denn bei euch aus? vertragt ihr trotz histaminintoleranz auch eine bestimmte nusssorte?
ob mit oder ohne nuss, wir hoffen jedenfalls euch gefällt der kuchen und wünschen euch noch einen schönen sonntag!

rezept
johannisbeerkuchen mit mandel
teig
180g johannisbeeren (am besten tiefgekühlt)
160g rohrzucker
40g mandelstifte
140g butter (zimmerwarm)
2 kleine eier (zimmerwarm)
0,5 vanilleschote
140g mehl (70g buchweizenmehl + 70g reismehl)
1 tl weinsteinbackpulver
mandelkrokant & dekoration
3-4 el zucker
50g mandelstifte
100-125g puderzucker
1 handvoll frische beeren

ofen auf 180grad (ober-/unterhitze) vorheizen. die butter mit dem zucker aufschlagen, nach und nach die eier und das mark der vanilleschote unterrühren. mehl und weinsteinbackpulver in einer separaten schüssel vermischen und in 3 teilen zu dem teig dazusieben und verrühren. die mandelstifte untermischen. eine kastenform einfetten und mit backpapier auslegen, und auf dem boden und an den seiten eine ca. 1cm dicke schicht teig anbringen. den rest des teiges mit den johannisbeeren vermischen und die form damit auffüllen. den kuchen für ca. 60-65min bei 180grad (ober-/unterhitze) backen. anschliessend 20min abkühlen lassen, dann aus der form heben und weiter auf einem kuchengitter komplett abkühlen lassen. etwas puderzucker mit ein bisschen milch zu einem dickflüssigen zuckerguss anrühren und mit einem esslöffen großzügig auf dem kuchen verteilen. den krokant zubereiten: zwei grössere stück backpapier bereitlegen. zucker in einer pfanne oder topf langsam erwärmen bis er flüssig wird und leicht braun, dann die mandelstifte unterheben und die masse sehr schnell mit einem löffel o.ä. auf einem stück backpapier verteilen und breitstreichen. auf dem zweiten backpapier zuckerfäden ziehen - einfach den rest des verbliebenen zuckers in der pfanne/topf mit der unterseite eines esslöffels aufnehmen und in geraden linien hin-und herbewegen. krokant und zuckerfäden auskühlen lassen und für die spätere deko in stücke brechen.

A Taste of Donegal 2014 on from 23rd- 25th August

Since its launch in 2008 the Taste of Donegal Food Festival has grown into a three-day celebration of great food and has continued to attract thousands of people every day to a tented village on the pier area in Donegal Town. Over 26,000 people attended the festival last year over the three days!

Against the backdrop of the Bluestack Mountains and Donegal Bay a mixture of celebrity and local chefs will again be cooking up a storm over the weekend of the 23rd, 24th and 25th August.


This years festival has once again gathered together top local restaurants and hotels and over 100 food and drink producers from all over Ireland and Northern Ireland who will be showcasing and selling their products. The food stalls will also be offering tastings from an unbelievable variety of food and drink, wine and craft beers, confectionery, specialist foods, meat, fish and dairy products.



Cookery demonstrations over the weekend will include: 
Neven Maguire, Gary O’Hanlon(Donegal Food Ambassador), Tony Singh (the Incredible Spice Man), Kevin Dundon (Dunbroody House), Brian Mc Dermott (the No Salt Chef), Anthony Armstrong, Máire Dufficy (Bordbia), Philippe Henkes, Martin Anderson (Fat Chef Slim), Ciaran Kennedy, Ethna Reynolds (Burlesque Chef) and me, Zack Gallagher (Irish Food Guide). There's also a Comedy Cookery Theatre by Joe Shannon & Frank Forde.


The food festival will also include master classes by experts who will showcase their specialist skills in pastry and bread making, meal planning, cocktail mixing and will help you make the right decision when choosing wine and craft beers for all meal occasions.

Experts include Richard Finney (wine and beers), Sian Breslin (meal planning) and Franck Pasquier (artisan bread making).


"A Passion To Inspire" Chefs Competition will take place under the watchful eye of Anthony Armtrong a judge from the World Association of Chefs Society , Peter Griffths M.B.E., President British Culinary Federation, Gerard M. Molloy American Culinary Federation and Mr Bob Mc Donald, Judges from the Master Chefs of Great Britain. Entrants will be required to cook and present two different dishes, a starter and a main course, each for two covers, showcasing the best of Irish produce.


The Committee say they are looking forward to again welcoming people to what has become the premier food and drink event here in the North West and one of the best Food Festivals in Ireland!

Award winning chef Gary O'Hanlon, originally from Ramelton and currently executive chef at Viewmount House, Longford, has written a new book"Food for the Soul" and the book's official launch takes place during A Taste of Donegal Food Festival, this weekend!

In this cookbook Gary opens the door to his own kitchen with recipes for home cooked dishes each with a very unique story attached. Gary will be signing copies of the book on Saturday and Sunday. You can purchase them at a special launch price of just €10.00.

A Taste of Donegal Food Festival will take place on Friday 22nd, Saturday 23rd and Sunday 24th August 2014 on the Pier Area in Donegal Town. The Festival will open to the public at 4.00pm to 10.00pm Friday, 11.00.am to 7.00pm Saturday and Sunday.

The opening evening (Friday) will conclude with an amazing fireworks display over Donegal Bay!

The 2014 Great Taste Award winners were announced this week and Irish food has again proven it being excellent quality product by claiming more of the prestigious Gold stars than ever before!



405 judges including leading retail buyers, chefs and food writers were involved in the seven-week judging process that involved over 10,000 individual products from the UK and Republic of Ireland. 

This year’s awards also included the first-ever judging session to be held in Belfast. I was delighted to be asked to be one of the judges and I spent a very interesting three days in Belfast working with some wonderful people who are simply and totally passionate about food.
