gluten-free mini tarts with vanilla pudding, blueberries and figs & a week of vacation in denmark

finally we get to share our pictures from denmark with you. it's only two weeks ago that we've been there and it feels like it's been ages. it was our first vacation since quite a long time and while i first though a week of vacation would be a huge amount of time, in the end i could have easily stayed two weeks longer. will remember this for the next vacation for sure! as i already wrote in the last post we fell in love with denmark since years and already travelled around the whole country. this time we went to the gorgeous little island orø with our dear friends eva and gesa. it's been a wonderful time with a lot of good food, a stunning view over the fjord from our little cabin, a lot of reading and hiking and almost every evening we sat around a little bonfire in the garden together. it could not have been better!
one afternoon nora decided to make these delicious gluten-free mini tarts with blueberries, figs and vanilla pudding. we enjoyed them together with eva and gesa in the garden while looking at the sea - quite a magical moment. luckily two tarts were still left the next morning, so we walk down to the sea and enjoyed them with our morning coffee. we will never forget this special week and place for sure and can't wait to go back already. 


ingredients (for 4 tarte pans á 12cm-ø)
tarte-pastry:
200g rice flour
125g cold butter
100g cane sugar
1 dash of salt
1 egg
vanillepudding powder:
1 pk vanilla custard powder (40g)
500ml milk
45g sugar
1 vanilla bean
topping:
250g blueberries
3 figs
blueberry powder (e.g. from mill&mortar)

blend rice flour, sugar and salt. dice cold butter and knead the butter in the flour-sugar-mix together with the egg - work quickly. shape pastry to a flat brick, wrap in clingfilm and cool for minimum 1 hour in the fridge. 
before you roll out the pastry, prepare the vanilla pudding as explained on the packing instructions (we added some extra vanilla pulp, because then the flavor is even more intense). preheat oven to 180degrees celsius top/bottom heat. butter your tarte pans. take half of the pastry off the fridge and roll out between 2 layers of floured clingfilm or baking paper. divide in 2 parts and turn the pastry upside down on the tarte pans. press the dough on the pans and prick the crust with a fork. prepare the second half of the pastry in the fridge the same way. bake the tarte crusts for 15min blind. the fill with vanilla pudding and berries and bake for another 10-15min (5min before end, add the fig slices). let cool down a bit, then serve lukewarm - we decorated with some blueberry-powder. bon appétit!

endlich kommen wir dazu euch unsere bilder aus dänemark zu zeigen. es ist gerade mal zwei wochen her dass wir dort waren, es fühlt sich aber schon wie eine ewigkeit an. 
es war unserer erster urlaub seit längerer zeit und während ich am anfang noch dachte, dass mit einer  freien woche eine ungalublich lange schöne zeit vor uns liegt, ist die woche im endeffekt viel zu schnell vergangen und wir hätten am liebsten noch zwei wochen bleiben wollen. das werden wir uns für die nächste reise sicher merken! wie ich schon im letzten post geschrieben habe, hat dänemark schon seit einigen jahren unser herz erobert und wir sind schon fast durchs ganze land gereist. dieses mal hat es uns gemeinsam mit unseren freunden eva und gesa auf die wunderschöne kleine insel orø verschlagen.  wir hatten wirklich eine wunderbare zeit mit viel gutem essen, einem atemberaubenden blick aus unserer kleinen hütte auf den fjord, sind gewandert und haben gute lektüre genossen und haben fast jeden abend mit einem kleinen lagerfeuer im garten ausklingen lassen. es hätte wirklich nicht schöner sein können!
an einem nachmittag hat nora dann diese köstlichen glutenfreien mini tarts mit vanille pudding, blaubeeren und feigen gebacken. wir haben sie gemeinsam mit eva und gesa im garten verspeist, während man einen fantastischen blick über den fjord hatte - wirklich ein wunderbarer moment. 
wir hatten auch noch das glück, dass am nächsten morgen zwei der kleinen tarts übrig waren. also sind wir runter zum wasser gelaufen und haben sie in wuderbarer umgebung mit unserem morgenkaffee genossen. diese besondere woche werden wir sicher nicht vergessen und freuen uns schon auf das nächste mal!








blaubeer-tartelettes mit vanillepudding

zutaten (für 4 tarteförmchen á 12cm-ø)
tarte-böden:
200g reismehl
125g kalte butter
100g rohrzucker
1 prise salz
1 ei
vanillepudding:
1 pck vanillepudding-pulver
500ml milch
45g zucker
1 vanilleschote
dekoration:
250g blaubeeren
3 feigen
blaubeerpulver (z.b. von mill&mortar)

reismehl, zucker und salz mischen. kalte butter in kleinere würfel schneiden und zusammen mit dem ei zügig in den teig kneten. teig zu einem flachen ziegel formen, in frischhaltefolie wickeln und für min 1h im kühlschrank kühlen.
vor dem ausrollen des teigs den pudding laut verpackungsanleitung vorbereiten (wir haben zusätzlich das mark einer vanilleschote hinzugefügt - dann ist das aroma noch intensiver).
ofen auf 180grad ober-/unterhitze vorheizen. tarte-förmchen buttern. die hälfte des teigs aus dem kühlschrank nehmen und zwischen 2 lagen bemehlter frischhaltefolie oder backpapier ausrollen, in 2 teile trennen und auf 2 förmchen stürzen. teig andrücken und mit einer gabel mehrmals in den teig stechen. die zweite hälfte des teigs ebenso auf die zwei anderen förmchen verteilen. tarteböden für 15min blind vorbacken, dann pudding und beeren auf den tarteböden verteilen und für weitere 10-15min backen (feigen schneiden und 5min vor ende der backzeit auf die blaubeeren legen). etwas abkühlen lassen, dann lauwarm servieren - wir haben die tartes noch zusätzlich mit blaubeerpulver dekoriert. bon appétit!

glutenfree bee sting cake with coconut sugar and raspberry cream


we just returned back home from our vacation in denmark and i'm still fulfilled with all the beautiful moments and impressions. this country took our hearts for sure, but that already happened almost four  years ago, when we traveled through denmark for three weeks. this time we spent a week on a small island and i can't wait to share some pictures with you guys. there was only one day of work in between, the rest of the time was all about reading, looking at the sea, enjoying the silence and beauty of nature and spending a good time with our friends. but more on that in the next post. now it's all about this super delicious cake, that we already posted on instagram. 
a few weeks ago we saw a very deliciously looking bee sting cake in a bakery. since then, i was craving for a piece of that cake, but of course it wasn't a gluten free one. lucky me, that nora decided to bake one! and of course a very special one, which in the end looked even better, than the one in the bakery. 
but it took some time to get there...normally almost all cakes, that nora bakes turn out perfectly at the first time, even if she creates a new recipe. i have no idea how she does that, she's my personal cake hero for sure! but this time was different. the first cake burned in the oven, the second one nora dropped accidentally just before she wanted to put it in the oven (did that ever happen to you?? it's so annoying that it's almost funny again) and then finally the third cake turned out well, oh so well! we used coconut sugar again, so that's why the batter has such a dark color. we hope you enjoy the recipe as much as we did and have a lovely sunday guys!















ingredients (for a 16-18cm-ø springform):
cake batter:
150g butter, room temperature
150g coconut sugar (or 125g sugar)
1 dash of salt
3 eggs, room temperature
125g rice flour
75g cornstarch
12g organic tartar baking powder (about 1 tbsp)
50ml milk
almond-crunch:
40g butter
2 tbsp butter
1,5 tbsp acacia honey (or another liquid honey)
1 dash of salt
2 tbsp milk
100g sliced almonds
filling:
100g mascarpone
120ml heavy cream (or whipping cream)
1/2 vanilla bean
200g frozen raspberries
50g sugar
1 pck agar-agar (gelling agent)
cake decoration:
150g heavy cream (or whipping cream)
150-200g berries (we took raspberries and redcurrants)
raspberry sauce:
200g frozen raspberries
2 tbsp sugar
1 tsp cornstarch

cake batter:
preheat oven to 175degrees celsius top/bottom heat. line the bottom of a springform with baking parchment and butter the sides. stir butter, sugar and salt for 2-3min with the dough hook of your electric hand mixer until creamy, then add one egg after the other, stir in between for 1 min. blend rice flour, cornstarch and tartar baking powder and sieve in 3 portions to the butter-sugar-egg mixture. bake the batter for 45min in the oven - in the meantime prepare the almond-brittle:
melt the butter in a small saucepan together with the sugar, honey and salt and bring the mixture to boil.
stir in the 2 tbsp milk and boil until the liquid is reduced to a nice thick consistence, then gently fold in the sliced almonds and let cool down for some minutes.
take the cake out of the oven after 45min baking time and spread the almond-brittle on the top and bake for another 10min (switch to grill function for 1min in the end, if the almonds could be a bit more roasted). let cool down the cake for 10min before you remove the springform. let cool down completely before you start to fill the cake.
filling and cake decoration:
whip the heavy cream and place in the fridge for a moment. mix mascarpone with the sugar. heat 150g of the frozen raspberries in small sauce pan until soft, then purée them (put the remaining 50g frozen raspberries in a small bowl and let them defrost). stir the agar-agar and vanille seeds in the raspberry-purée and boil for 1min (as said on packing instructions), then quickly fill the sauce into a medium sized bowl and stir in the mascapone, then in 2 portions the whipped cream - leave the cream for moment in the fridge. cut the cake horizontal into 2 parts using a bread knife. fold the defrosted raspberries into the cream and spread the filling on the bottom layer of the cake and leave for 1/2 hour in the fridge, before you place the top layer on the filling. leave the cake for 2-3 hours in the fridge, the whip the heavy cream, spread on the cake top and decorate with berries.
raspberry sauce:
defrost the frozen raspberries over low heat in a saucepan, then purée and strain the puréed raspberries to remove the seeds. bring sauce together with the sugar to boil and thicken with 1 tsp cornstarch if needed. pour sauce over the cake or cake pieces when you serve. bon appétit!

wir sind gerade von unserem urlaub aus dänemark wiedergekommen und ich fühle mich immer noch ganz erfüllt von den wunderbaren momenten und eindrücken. schon seitdem wir vor fast vier jahren durch ganz däemark gereist sind, hat dieses land einen besonderen platz in unserem herzen. dieses mal haben wir fast eine woche auf einer kleinen insel verbracht und freuen uns schon euch bald ein paar fotos zu zeigen. bis auf einen tag arbeit haben wir die meiste zeit mit guter lektüre verbracht, aufs meer geblickt, die ruhe und schönheit der uns umgebenden natur genossen und eine wunderbare zeit mit unseren freunden verbracht. aber mehr dazu im nächsten post, jetzt widmen wir uns ganz diesem köstlichen kuchen, den wir euch schon auf instagram gezeigt haben.
vor ein paar wochen haben wir einen bienenstich in einer bäckerei gesehen, den ich nicht mehr aus dem kopf bekommen habe. natürlich war dieser nicht glutenfrei, also hat nora kurzerhand beschlossen selbst einen zu backen. natürlich ist es ein ganz besonderer geworden und im endeffekt sah er sogar noch besser aus als der bienenstich in der bäckerei. aber es brauchte seine zeit bis wir zu diesem prachtexemplar gekommen sind..normalerweise sehen so gut wie alle kuchen, die nora bäckt nahezu vollkommen aus und das meist schon beim ersten versuch, selbst wenn wir ein neues rezept entwickeln. ich weiß auch nicht wie nora das anstellt, sie ist ganz bestimmt meine persönliche kuchen-heldin!
aber diesmal war es anderes: der erste kuchen ist im ofen verbrannt, der zweite ist aus der form gefallen, kurz bevor nora ihn überhaupt erst in den ofen schieben wollte (ist euch das jemals passiert?? das ist so absurd, dass einem fast schon wieder zum lachen zumute ist!) und beim dritten versuch hat dann zum glück endlich alles geklappt, sogar sehr gut geklappt. für den teig haben wir mal wieder kokosblütenzucker verwendet, deshalb hat der kuchen auch so eine schöne karamellige farbe. lasst euch dieses köstlichkeit nicht entgehen und habt einen schönen sonntag ihr lieben!




glutenfreier bienenstich gebacken mit kokosblütenzucker und leckerer himbeer-creme

zutaten (für eine 16-18cm-ø springform):
boden:
150g butter, zimmertemperatur
150g kokosblütenzucker (oder 125g raffinierten zucker)
1 prise salz
3 eier
125g reismehl
75g maisstärke
12g weinsteinbackpulver (etwa 1 el)
50ml milch
mandel-krokant:
40g butter
2 el zucker
1,5 el akazienhonig (o. ein anderer flüssiger honig)
1 prise salz
2 el milch
100g mandelsplitter
füllung:
100g mascarpone
120ml konditorsahne (o. schlagsahne)
1/2 vanilleschote
200g tk-himbeeren
50g zucker
1 pk. agar agar
dekoration:
150g schagsahne
150-200g beeren (wir haben himbeeren und johannisbeeren gemischt)
himbeersauce:
200g tk-himbeeren
2 el zucker
1 tl maisstärke

kuchenteig backen:
ofen auf 180grad ober-/unterhitze vorheizen. den boden einer springform mit backpapier auslegen und die seiten buttern. butter mit zucker und salz schaumig 2-3min schlagen, dann eier nacheinander einrühren - dazwischen 1min rühren. reismehl, maisstärke und weinsteinbackpulver mischen und in 3 teilen zu der butter-zucker-ei-masse sieben und unterrühren. teig für 45min im ofen backen - in der zwischenzeit mandelkrokant vorbereiten:
butter zusammen mit zucker, honig und salz in einem kleinen topf zum schmelzen bringen und dann aufkochen. die 2 el milch unterrühren und etwas einköcheln bis die masse dickflüssiger geworden ist, dann die mandelsplitter vorsichtig unterrühren und etwas abkühlen lassen.
nach 45min backzeit kuchenboden aus dem ofen nehmen und mandelkrokant darauf verteilen und für weitere 10min fertigbacken (evt. zum schluss für 1min grillfunktion anstellen, falls die mandelsplitter noch etwas brauner werden dürfen). springform auf einem kuchengitter 15min stellen, dann springform entfernen und kuchen komplett abkühlen lassen.
füllung und dekoration:
schlagsahne aufschlagen, im kühlschrank kurz kühl stellen. mascarpone mit zucker verrühren. 150g der tk-himbeeren in einem topf langsam erwärmen und wenn sie weich sind, pürieren (restliche 50g tk-himbeeren in einer schale auftauen lassen). agar und vanillemark in himbeerpüree einrühren und 1min (laut verpackungsanleitung) aufkochen, dann sehr zügig in eine grössere schale füllen und mascarpone einrühren, dann die schlagsahne in 2 portionen einrühren und die creme kurz in den kühlschrank stellen. den boden waagerecht mit einem brotmesser zerteilen. aufgetaute himbeeren unter die creme ziehen, dann himbeercreme auf dem boden verteilen und für 1/2 stunde in den kühlschrank stellen, bevor man den tortendeckel darüberlegt. kuchen min. 2-3 stunden in den kühlschrank stellen, dann schlagsahne aufschlagen und auf dem kuchen verteilen, dann mit beeren verzieren.
himbeersauce:
himbeeren in kleinem topf auftauen und pürieren, dann durch ein sieb passieren, mit zucker aufkochen, evt. mit 1 tl maisstärke binden, damit sie dickflüssiger wird.
sosse zum servieren über der torte oder tortenstücken verteilen. bon appétit!

a gathering for villeroy&boch: gluten free pasta with curry peas, roasted figs and grilled corn

it feels like summer is over soon,  you can already smell autumn in the air. it's supposed to be crazy hot again in berlin next week, but then we will be on vacation with 20 degress and rain. even if we love autumn so much, all these colors, the apple and pear haverest, pumpkins and long walks in the woods, i will miss this summer. a lot of exciting things happend to us, we worked on a special project, that we can hopefully share with you soon. so i'm pretty happy, that we enjoyed this last wonderful summer evening in our dear friends garden a week ago, sitting outside in shorts with a cold drink and having this delicious summer meal. we grilled fresh corncobs - our favorite during summertime - roasted figs in the oven and ate this together with a delicious glutenfree pasta and peas cooked in curry and garlic. such a feast! 
this was our second little gathering, that we hostet for villeroy&boch* and we used their beautiful 'artesano' tableware* again. we fell in love with these gorgeous pasta plates and could eat pasta every day now. we hope you enjoy the recipe guys and have a lovely sunday!

fettucine:
400-500g fettucine (depends on your appetite)
salt
curry-peas:
olive oil
4 garlic cloves 
1 medium onion
450g frozen peas
3-4 tsp curry powder (sweet or english type)
1 pinch of grated nutmeg
1 tbsp acacia honey (or another liquid honey)
salt
figs:
4 figs
2 tsp acacia honey
1 dash of seasalt
1 handful grated parmesan
corncobs:
4 corncobs
2-3 sprigs chervil
mediterranean chili-bell pepper-butter:
50g butter
1 dried & grounded chili pepper
1 tl bell pepper powder sweet
1 tl dried italien herbs
1 dash of salt
basil-garlic-butter:
50g butter
2-3 freshly pressed garlic cloves
10 basil leaves
1 dash of salt

(zum essen gab es einen hibiskus-eistee mit ingwer, honig und rosmarin) 

prepare the butter:
mix all ingredients with a fork on a flat plate, season and leave in the fridge until you serve.
fettucine + curry peas + corncobs:
cook fettucine in salt water until done.
bend the corn leaves gently back and knot together with one leave. cook in a large pot with boiling water for 12-15min until done. dry the corncobs with kitchen paper and roast in a cast-iron pan for a few minutes. turn once in a while. spread some chopped chervil on top.
chop garlic and onion and sauté together with a bi olive oil and the curry powder for 2-3minutes, then add the frozen peas. sauté for 2minutes, then add enough water, that the peas are almost covered. cook for 5-10min, add nutmeg, maybe add some more water, if needed - in the end almost all water should be gone. stir in the honey and season with salt. gently fold in the cooked fettucine, taste. spread some parmesan on top when you serve the fettucine with the figs.
bake the figs:
preheat oven to 180 degrees celcius top/bottom heat. wash and slice figs, place them on a baking sheet covered with baking paper and spread the honey on the figs. bake for around 10min. sprinkle some seasalt on them, if you like.

in der letzten woche hat es sich so angefühlt als wäre der sommer beinah schon vorbei. man konnte förmlich den herbst schon in der luft riechen. nächste woche soll es noch mal richtig heiß in berlin werden, aber da werden wir bei 20 grad und regen im urlaub sein, worauf wir uns allerdings schon sehr freuen! in einem kleinen häuschen mit freunden am meer und guter lektüre sind regentage doch etwas wunderbares! auch wenn wir den herbst sehr lieben, all die prächtigen farben, die äpfel und birnen ernte, die kürbiszeit und lange spaziergänge im wald, diesen sommer werden wir vermissen. es gab viele aufregende entwicklungen und erinnerungen und vor allem haben wir sehr intensiv an einem projekt gearbeitet, dass wir hoffentlich bald mit euch teilen können. wir haben diesen sommerabend letzte woche mit unseren freunden im garten also besonders genossen. es war so schön noch einmal draußen zu sitzen, in shorts und mit einem kühlen drink in der hand, bevor der herbst vollkommen einzug hält. gegessen haben wir diese köstliche glutenfreie pasta, mit gerösteten feigen, gebratenem mais und curry-knoblauch-erbsen. ein wahres festmahl!
dieses kleine gathering war nun das zweite das wir für villeroy&boch* arrangiert haben. wir haben wieder die wunderbaren produkte der 'artesano' serie* gebraucht und uns gleich in die pasta-teller verliebt. am liebsten würden wir jetzt jeden tag pasta kochen, allein schon um auf den schönen tellern anzurichten :)

glutenfreie fettucine mit curry-erbsen, gebackenen honig-feigen & gegrilltem mais
zutaten für 4 personen:

fettucine:
400-500g fettucine (je nach hunger)
salz
curry-erbsen:
olivenöl
4 knoblauchzehen
1 größere kochzwiebel
450g tk-erbsen
3-4 tl currypulver (sorte süß oder englisch)
1 prise muskat
1 el akazienhonig (oder ein anderer flüssiger honig)
salz
1 handvoll geriebenen parmesan
feigen:
4 feigen
2 tl akazienhonig
meersalz
mais:
4 maiskolben
2-3 stiele kerbel
mediterrane chili-paprika-butter:
50g butter
1 getrocknete & gemahlene chilischote
1 tl paprikapulver edelsüß
1 tl getrocknete italienische kräuter
1 prise salz
basilikum-knoblauchbutter:
50g butter
2-3 frisch gepresste knoblauchzehen
10 basilikum-blätter
1 prise salz

(zum essen gab es einen hibiskus-eistee mit ingwer, honig und rosmarin) 

butter vorbereiten:
jeweils alle zutaten mit einer gabel auf einem flachen teller vermischen, abschmecken und bis zum servieren im kühlschrank aufbewahren. 
fettucine + curry-erbsen + mais:
fettucine in salzwasser gar kochen.
maisblätter vorsichtig nach hinten biegen und mit einem mais-blatt nach hinten knoten. in einen großen topf mit kochenden wasser für 12-15min kochen bis sie gar sind. mit etwas küchenpapier abtupfen und in einer eisenpfanne ein paar minuten rösten, dabei ab und zu drehen. gehackten kerbel darüber streuen.
knoblauch und zwiebel fein hacken und in einer großen pfanne mit olivenöl und dem curry 2-3min anbraten, dann die erbsen dazugeben. erbsen für 2min mitbraten, dann wasser dazugeben bis die erbsen fast bedeckt sind. für 5-10min köcheln lassen, muskat unterrühren, evt. zwischendurch etwas wasser dazugeben, aber nur soviel dass am schluss fast alles wieder verkocht ist. honig unterrühren und mit salz abschmecken. fettucine unterheben, abschmecken.
feigen:
ofen auf 180grad celsius ober-/unterhitze vorheizen. feigen waschen, in scheiben schneiden, auf ein backblech mit backpapier legen, honig über den feigen verteilen und für etwa 10min backen. etwas meersalz darüber verstreuen.
zum schluss über die fettucine und feigen etwas parmesan verteilen.

Get your Hands on a new copy of "All in the Cooking"

For many decades, All in the Cooking was the go-to book for anyone studying Domestic Science/Home Economics in secondary school. 



First published in 1946, even today it is an absolute gem to add to any cookbook collection, where you can relearn all the classic recipes you perfected as a teenager. From classic sweet puddings to savoury sauces, a myriad of potato preparations to special “invalid cookery” dishes and the list goes on and don't forget that simply delicious old fashioned “Queen of Puddings” recipe!

Donegal Entrepreneur – Deirdre McGlone, owner of Harvey’s Point Hotel has been announced as one of the Lead Entrepreneurs for programme looking for 50 rural start-up female-led businesses
Deadline for applications is Friday 11 September

Applications are being sought for a new fully funded programme aimed at providing early stage female entrepreneurs living in rural Ireland with the knowledge, support and networking opportunities to advance the development of their businesses.
Entitled ACORNS - Accelerating the Creation Of Rural Nascent Start-ups - the programme is focused on unleashing the potential of female entrepreneurs living in rural Ireland who have recently started a business or who have taken concrete steps towards setting up a business. 
ACORNS is dedicated to seeking out and assisting up to 50 start-up female entrepreneurs living in rural areas as defined by CEDRA – the Commission for the Economic Development of Rural Areas. These are all areas of the country outside the administrative city boundaries of Dublin, Cork, Galway, Limerick and Waterford.
As ACORNS is fully funded under the CEDRA 2015 Rural Innovation and Development Fund through the Department of Agriculture, Food and the Marine, there is no charge for successful participants.


Donegal based entrepreneur, Deirdre McGlone, has been announced as one of the Lead Entrepreneurs on the inaugural ACORNS programme. Deirdre McGlone has run Harvey’s Point Hotel located on Lough Eske, Co. Donegal for the last 26 years. Opening with 20 bedrooms, a restaurant and a small team, the hotel has seen phenomenal growth over the years. Today, the hotel boasts 64 suites and has recently launched ‘The Lodge @ Harvey’s Point’, located on the grounds of the hotel for special interest groups.
In January 2015, Harvey’s Point was voted Number One Hotel in Ireland in the TripAdvisor Travellers’ Choice awards for the third successive year. The multi award winning hotel was also ranked No. 8 in Europe and No. 23 in the world. With 120 people employed in Harvey’s Point, Deirdre and her team continue to push the boundaries as an industry leader, keeping hotel standards at the highest level.

The ACORNS initiative is an excellent opportunity for female Food Entrepreneurs 

To qualify for consideration, applicants must have recently set up a new business (no earlier than the 9th of July 2013), which they either own or part-own. Those who are not already trading must be actively planning a new venture and have a clear idea of what they want to achieve. If they are not already trading, activities such as organising the start-up team, looking for equipment / facilities, saving money for the start-up or writing the business plan would all be considered as active commitments to starting a business. 

There is no restriction on the sector in which the new business is focused. However, the selection process is competitive. The deadline for applications from interested candidates is Friday 11 September and the pilot programme will begin on the 30th September, at the ACORNS residential Development Forum in Portlaoise, Co. Laois. 

The ACORNS initiative will consist of interactive round table sessions that are facilitated by other female entrepreneurs who have started and successfully grown businesses in rural Ireland and believe in the philosophy of entrepreneurs supporting entrepreneurs. 
They include:

·         Anne Cusack, Critical Healthcare, Westmeath
·         Anne Reilly, Paycheck Plus, Louth
·         Caroline McEnery, The HR Suite, Kerry
·         Deirdre McGlone, Harvey’s Point, Donegal
·         Mary B Walsh, Ire Wel Pallets, Wexford

Known as ‘Lead Entrepreneurs’, these role models will work in a voluntary capacity to facilitate monthly round table sessions with up to eight participants. These will take place once a month over six months and will address enterprise challenges and support participants to consider how best to develop and advance their early stage businesses for sustainability and growth.

As past participants of another female entrepreneurship initiative – the Going for Growth programme -all of the Lead Entrepreneurs have first-hand experience of the round table peer learning approach and of its benefits. 

Paula Fitzsimons is the Founder of Fitzsimons Consulting, the company awarded the contract to run the ACORNS programme and which also runs the Going for Growthinitiative. She says:
 “I believe that significant untapped entrepreneurial potential exists among women in rural Ireland and the objective of ACORNS is to equip these early stage entrepreneurs with the appropriate knowledge, confidence and networks to successfully start and develop sustainable businesses.  Working with the team of volunteer Lead Entrepreneurs and with the support of the Department of Agriculture, Food and the Marine and CEDRA, I am convinced that we can harness that potential for the good of the individuals concerned, their local communities and the wider economy.” 
A report from the Commission for the Economic Development of Rural Areas (CEDRA) contained a recommendation that a Rural Innovation and Development Fund should be developed to support “innovative, small scale pilot initiatives that explore the diverse range of potential identified through the CEDRA process”.

Simon Coveney TD, Minister for Agriculture, Food and the Marine provided for the setting up of this fund in his 2015 budget allocation and, commenting on the ACORNS programme, he says: “I am delighted that this initiative is getting underway. Job creation is a huge focus for this Government and I hope that by targeting female entrepreneurs, who are currently under represented in start–up enterprises, that we can increase the level of business and employment generation in rural areas”

Minister of State for Rural Affairs,  Ann Phelan TD, who is responsible for the implementation of the CEDRA Report,  says that this CEDRA initiative aims to encourage a stronger level of enterprise development in rural areas and adds “Rural women’s entrepreneurship clearly represents an untapped potential and can contribute significantly to our economic growth. For many rural women, entrepreneurship is part of a broader livelihood strategy, often undertaken initially on a part-time basis. Emerging businesses need support to flourish. I am a strong believer in the value of mentors and in the importance being able to turn to experienced and trusted advisors from a variety of industries for advice and support”.

white chia-seed-coconut-pudding with plum-fig compote


our first experiences with chia-seed-puddings wasn't really good. it's almost two years ago now, that we tried our first chia-pudding and i didn't liked it all. we tried various recipes, because these little seeds are so healthy but i never really got into it. when we saw white chia seeds in the organic supermarket some weeks ago, i told nora we should give it another try. and seriously guys: this is the BEST chia-pudding i've ever ate. i love the contrast between the sweet chia-coconut-pudding and the slighty sour plum compote, it tastes heavenly! we will have a week of vacation soon and i'm already sure, that this delicious chia-pudding will be our victuals for the car ride.
speaking of vacation: we've been shooting this tasty chia-pudding in our friends and neighbours garden and really enjoyed it. the morning started quite grey and cloudy so we were really happy, when the sun decided to show off. and what a magical light all at once! after the shoot we enjoyed this breakfast treat with rahlel, lea and anita while sitting under a beautiful old oak tree. such a pleasure!


ingredients (for 2 (large) portions):

50g white chia
325g vanilla coconut milk yoghurt (e.g. from "harvest moon")
240ml rice milk
2 tbsp acacia honey (or another liquid honey)
250g pitted wild plums (or another sort of plums)
2 figs
2-3 tbsp coconut sugar
1 vanilla bean
1/2 tsp cinnamon
1 tsp corn starch
2-3 mint sprigs
1 handful almonds

prepare the chia-pudding an evening before: blend coconut yoghurt with the rice milk, then stir in the chia seeds. place the mixture in the fridge overnight, so they can soak. 
next morning wash and pit plums and heat in a saucepan together with the coconut sugar, vanilla seeds, scraped vanilla bean, cinnamon and a bit water (about 200ml). let the compote simmer for 5-10min until  the plums are soft (almost in the end add washed and sliced figs to the compote). taste, if you need more sweetness and mix in a small bowl the cornstarch with 2-3 tbsp water, stir in the compote, so it thickens. add some chopped mint. stir the honey in the coconut chia pudding and layer chia pudding and compote alternating into your glasses. decorate with fresh plum slices, chopped almonds and a few mint leaves. bon appétit!

unsere erste erfahrung mit chia pudding war nicht gerade die beste. es ist jetzt fast zwei jahre her, dass wir unseren ersten chia-pudding gegessen haben und wir mochten es überhaupt nicht. weil die kleinen samen ja so gesund sind, haben wir verschiede rezepte ausprobiert, waren aber nie zufrieden. als wir dann vor kurzem weiße chia-samen im biosupermarkt entdeckt haben, wollten wir dem ganzen noch mal eine neue chance geben. und ganz im ernst: das ist der BESTE chia-pudding, den ich je gegessen habe! ich liebe den kontrast vom süßen chia-kokos-pudding und dem etwas saurem pflaumen-feigen-kompott - einfach himmlisch! wir sind bald eine woche verreist und ich weiß schon jetzt genau, dass dieser köstliche pudding unser proviant für die autofahrt sein wird.
apropos verreisen: das shooting im garten unserer freunde und nachbarn war auch schon wie ein kleiner urlaub. nach einem grauen und bewölktem morgen waren wir froh, dass sich die sonne doch noch hat blicken lassen und den garten ganz plötzlich in wunderschönes licht getaucht hat.
nach dem shooting saßen wir mit rahel, lea und anita unter der alten eiche und haben den köstlichen chia-pudding verspeist. was für eine freude! 


weisser chia-pudding mit kokos-joghurt & wildem pflaumen-feigen-kompott

zutaten für 2 (große) portionen:
50g weisser chia
325g vanille kokosnuss-milch-joghurt (z.b. von "harvest moon")
240ml reismilch
2 el akazienhonig (o. ein anderer flüssiger honig)
250g entsteinte wilde pflaumen (oder eine andere sorte)
2 feigen
2-3 el kokosblütenzucker
1 vanilleschote
1/2 tl zimt
1 tl speisestärke
2-3 stiele frische minze
1 handvolle mandeln

vorbereitung am abend vorher: kokos-joghurt mit reismilch vermischen, dann die chia-samen unterrühren und über nacht in den kühlschrank zum quellen stellen. am nächsten morgen pflaumen waschen, entsteinen und mit kokosblütenzucker, vanillemark, ausgekratzter vanilleschote, zimt  und etwas wasser (ca. 200ml) zum köcheln bringen. 5-10min leicht vor sich hinköcheln lassen bis die pflaumen zerfallen (fast zum schluss die gewaschenen und in scheiben geschnittenen feigen dazugeben). die süsse abschmecken und etwas speisestärke in einer kleinen schüssel mit 2-3 el wasser anrühren und unter das kompott rühren damit die soße andickt. noch etwas gehackte minze unterrühren.
den honig unter den chia-pudding rühren und chia-pudding und pflaumenkompott abwechselnd in die gläser schichten. ein paar frische pflaumenscheiben, gehackte mandeln und minzblätter darüber geben und servieren. bon appétit!
