Great Taste 3-Star Awards Winners for Ireland

Seven Irish Food Producers have come out on top with the coveted 3-Star Allocation, in this years' Guild of Fine Foods Great Taste Awards for 2015, which were just announced today. The winners are:

glutenfree peach-gooseberry-thyme cake & a gathering for villeroy&boch

last weekend we hosted a wonderful gathering for villeroy&boch* in our friends beautiful old barn. 
we already told you about them in this post, it's always such a pleasure to spend time with rahel, lea and anita together.
when villeroy&boch asked us if we want to work with their products we immediatley fell in love with their artesano original series*. it's pure and elegant with some wooden elements - very pretty!
nora made this delicious peach-gooseberry-thyme cake, with the few peaches we had from our garden (these taste even extra delicious). the buttercream is very sweet which makes a great contrast with the slightly sour gooseberry-thyme jelly. because there is already quite a lot of sugar in the frosting we used coconut sugar in the cake batter, which tastes really really good (a little bit like caramel). 
so we decorated our friends old barn and had a lovely evening with this tasty cake and iced tea together. to conclude the evening anita made a cozy campfire. this is how every weekend should look like, right?! have a lovely sunday guys!

ingredients for a 18cm-ø springform pan:
cake batter
4 eggs (size l)
150g coconut sugar
1 dash of salt
150g rice flour 
2 tsp organic (tartar) baking powder
gooseberry jelly:
250g gooseberries
40g cane sugar
250ml redcurrant juice
2-3 thyme sprigs
4g agar (vegetarian gelling agant)
peach-vanilla-cream:
550g peach flesh (about 4 peaches)
250ml water
80g sugar
1 vanilla bean
250g quark 
330ml whipping cream
2 pk agar (12g)
buttercream:
350g butter (room temperature)
600g powdered sugar
natural food coloring (we mixed orange with a bit purlpe)
topping:
1-2 peaches
1 handful gooseberries
2-3 thyme sprigs

cake batter:
preheat fan oven to 175degrees celsius . line a springform pan with baking parchment and grease the sides. separate eggs, beat egg whites half stiff. continue beating and gradually add half of the coconut sugar. beat 1-2min longer. beat remaining coconut sugar together with the egg yolks for 2min and fold in gently the beaten egg whites. blend organic (tartar) baking powder with the rice flour and sieve in 3 portions to the beaten egg mix - stir in with a cooking spoon. fill the cake batter into the springform pan and bake for 25min on the middle oven rack, then let cool down the cake with opened oven door. afterwards remove from springform pan and place on an cooling rack. 
gooseberry jelly:
carefully cut cake horizontal into 4 cake bottoms - you can use a bread knife. wash gooseberries, top and tail them. bring gooseberries, cane sugar, thyme and redcurrant juice to boil and let simmer for 5min (mash gooseberries e.g. with a potato masher). strain compote. you need 300ml fruit sauce, but if it´s less, just fill up with extra redcurrant juice. use agar to jelly the gooseberry sauce (as said on the packing instructions: stir the agar in 100ml fruit sauce and boil for 1min, let cool down for a moment and stir in remaining fruit sauce - wait until sauce turns to a thick consistence). spread half of the jelly on the lower cake bottom and the other half on the second from top. 
peach-vanilla-cream:
peal and pit peaches. cut into slices. let slices simmer for 5min together with water, sugar, vanilla seeds and vanilla pod. take slices out of the pot, cut into smaller pieces and let drain in a sieve for 15min (remove the vanille pod in the end).  boil the drained juice together with the remaining juice from the pot until you have about 200ml juice left. let drain the quark in a sieve or clean kitchen towel. whip the whipping cream and put into the fridge. boil the peach juice together with the agar for 1min, fill into a medium-sized bowl, let cool down for a moment, then stir in in two portions the quark, then fold in gently in several portions the whipped cream. at least fold in the peach chunks. let the cream cool down for 30min in the fridge. afterwards spread the cream on the cake layers (eventually put the cake layers separately for 1 hour into the fridge, before you stack them. 
buttercream:
sieve the powdered sugar. stir the butter with the dough hook for 1-2min, then stir in the powdered sugar portion by portion. if the frosting is to solid, stir in a bit milk (add by tablespoons). spread a very thin layer of buttercream at the cake sides (make sure you fill all gaps evenly). spread a bit thicker layer buttercream (mx. 5mm) on the top, which overlaps the edges about 1cm (that´s helpful for the finishing). fill a piping bag with round icing tip (11-13mm-ø) with half of the buttercream and spread two rings of buttercream below the edge of the cake. fill remaining buttercreme back into the mixing bowl (maybe set 1-2 tbsp of buttercream to one side for later corrections) and color your buttercream. 
fill colored buttercream back into your cleaned piping bag and spread the buttercream in "rings" until the lower edge. now smooth the sides with a spatula (work parallel and clean the spatula in between). 
finish the top and edges of the cake and put the cake into the fridge.
decoration:
cut peaches into thin slices and arrange them in a circle on the cake top, decorate with gooseberries and thyme leaves.

letztes wochenende haben wir für villeroy&boch* ein kleines gathering in der wunderschönen alten scheune unserer freunde rahel, lea und anita arrangiert.
wir haben euch bereits von den dreien in diesem post erzählt, es immer so schön zeit mit ihnen zu verbringen!
als villeroy&boch uns gefragt hat, ob wir lust hätten mit ihren produkten zu arbeiten, haben wir uns sofort in die artesano original serie* verliebt. pur, simpel und elegant mit ein paar schönen holzelementen, ganz nach unserem geschmack!
nora hat diese köstliche pfirsich-stachelbeer-thymian-torte, mit den lezten pfirsichen aus unserem garten (die schmecken immer besonders gut!), gebacken. die buttercreme der torte ist sehr süß, was einen tollen kontrast zum etwas sauren stachelbeer-thymian gelee bildet. da allerdings schon sehr viel zucker in der buttercreme ist, haben wir den kuchenteig mit kokosblütenzucker gebacken. dadurch hat der teig eine karamellige note, einfach köstlich!
wir haben also die alte scheune unserer freunde dekoriert und hatten dann einen gemütlichen abend mit    der leckeren torte und eistee. zum ausklang gab es sogar noch ein lagerfeuer. so sollte doch jedes wochenende aussehen, oder?! habt einen schönen sonntag ihr lieben!

pfirsich-stachelbeer-thymian torte (18cm-ø):

kuchenboden:
4 eier (gr. l)
150g kokosblütenzucker
1 prise salz
150g reismehl
2 tl weinsteinbackpulver
stachelbeergelee:
250g stachelbeeren
40g rohrzucker
250ml roter johannisbeersaft
2-3 thymianzweige
4g agar-agar (pflanzliches geliermittel)
pfirsich-vanille-creme:
550g pfirsichfleisch (etwa 4 pfirsiche)
250ml wasser
80g zucker
1 vanilleschote
250g quark
330ml konditorsahne
2 pk agar (12g)
buttercreme:
350g butter (zimmertemperatur)
600g puderzucker
natürliche lebensmittelfarbe (evt. orange und etwas pink mischen)
topping:
1-2 pfirsiche
1 handvoll stachelbeeren
2-3 zweige thymian

kuchenteig:
backofen auf 175grad celsius umluft vorheizen. den boden einer springform mit backpapier auslegen und die seiten buttern. eier trennen, eiweiss halbsteif schlagen. weiter schlagen und die hälfte des kokosblütenzuckers einrieseln lassen und 1-2min weiter schlagen. den restlichen zucker und eine prise salz mit den eigelben 2min aufschlagen. eigelbe vorsichtig unter unter den eischnee heben. mehl und weinsteinbackpulver mischen und in 3 portionen zum eigemisch sieben und mit einem kochlöffel unterrühren. teig in die springform füllen und für 25min auf der mittleren schiene backen, dann den herd austellen und kuchenboden bei leicht geöffneter ofentür abkühlen lassen, anschliessend aus der springform lösen und auf ein kuchengitter legen.
stachelbeergelee:
kuchenteig waagerecht mit einem brotmesser vorsichtig in 4 teile zerschneiden.
stachelbeeren waschen und putzen. zusammen mit dem zucker, thymian und johannisbeersaft aufkochen und 5min köcheln lassen (stachelbeeren mit einem kartoffelstampfer o.ä. zerdrücken). kompott passieren (durch ein sieb oder mit einer flotten lotte). es sollten min. 300ml fruchtsauce ergeben, falls nicht - einfach mit johannisbeersaft auffüllen. mithilfe von agar-agar eindicken (100ml flüssigkeit mit agar-agar mischen und 1min aufkochen, kurz abkühlen, dann restliche 200ml fruchtsauce einrühren und warten bis sie schön dickflüssig wird). je eine hälfte des gelees auf dem untersten kuchenboden und dem zweit-obersten kuchen verteilen.
pfirsich-vanille-creme:
pfirsiche schälen, entsteinen und in spalten schneiden. zusammen mit dem wasser, zucker, vanillemark und vanilleschote für 5min köcheln lassen. pfirsichspalten herausnehmen, in kleinere stücken schneiden und im sieb für 15min abtropfen lassen. abgetropften saft zu saft im topf geben auf etwa 200ml einreduzieren. quark in einem sieb oder küchentuch abtropfen lassen. die konditorsahne aufschlagen und im kühlschrank kühl stellen. agar mit den 200ml pfirsichsaft 1min aufkochen, in eine größere schüssel füllen, einen moment abkühlen lassen, dann zuerst in zwei teilen den quark zügig einrühren, dann die schlagsahne in mehreren portionen unterheben. zu letzt die pfirsichstückchen unterrühren. masse für etwa 30min im kühlschrank ruhen lassen. anschliessend creme auf die 3 unteren tortenböden verteilen (evt. diese einzeln zunächst für 1 stunde in den kühlschrank stellen, bevor man sie übereinander stapelt).
buttercreme:
puderzucker zunächst sieben. dann butter mit dem knethaken 1-2min rühren, dann nach und nach puderzucker einrühren. falls das frosting noch sehr fest ist, kann man etwas milch (esslöffelweise) unterrühren. eine ganz dünne schicht buttercreme mit einem tortenspachtel auf der aussenseite der verstreichen (wichtig ist nur, dass die zwischenräume ebenmäßig aufgefüllt sind). dann auf der tortendecke eine etwas dickere schicht buttercreme (max. 5mm) verstreichen, die an den rändern etwa 1cm überlappt (wichtig für das finish).  einen spritzbeutel mit rundem auf aufsatz (11-13mm-ø) mit der hälfte der buttercreme befüllen und unterhalb des oberen randes der torte 2 schmale buttercreme-"schläuche" kreisum auftragen. die restliche buttercreme zurück in die rührschüssel füllen (evt. 1-2 el beiseite stellen für spätere korrekturen) und mit lebensmittelfarbe einfärben. buttercreme in gereinigten spritzbeutel füllen und torte bis zum unteren rand mit mehreren lagen buttercreme versehen. mit dem kuchenspachtel nun die seiten vertreichen bzw. glätten (schön parallel arbeiten und ab und zu den spachtel mit küchentuch reinigen). zum schluss den oberen tortenrand herausarbeiten. in den kühlschrank zum kühlen stellen.
dekorieren:
die pfirsiche in schmale spalten schneiden und kreisförmig auf der torte anordnen, dann mit stachelbeeren und thymianblättern dekorieren.

mini pavlova's with gooseberry compote and edible flowers

last week we got the german food magazin essen&trinken (already shared a picture on instagram) and immediatly got inspired by one of their pavlova recipes. but as it was made with brown chocolate (which laura can't eat) and cherries (which we just had in one of our last recipes), we decided to change the recipe and give it another twist. since the gooseberries in our garden were almost too ripe we really wanted to use them. so nora made a delcious gooseberry-compote and also put some of the beautiful edible flowers which we had left from our gathering last week on top of the pavlovas. this recipe is so simple and easy to prepare but at the same time it's SO delicious. seriously guys, we alreday started to share the first pavlova with each other when we were still shooting. i just love the contrast of the sweet pavlova with the slightly sour gooseberries. so give it a try guys, i'm sure you will like it as well!



ingredients (for 6 pieces):
mini-pavlovas: 
4 cold egg whites (sizes m/l)
salt
200g sugar
1 vanilla pod
gooseberry compote:
400g goose berries
40g cane sugar
250ml red currant (or similar)
15g corn starch
also:
330 ml whipping cream
shaved white chocolate (just shave a bit chocolate from a chocolate bar using a knife)
edible flowers (if you want and if it´s available in your supermarket)

mini-pavlovas:
prehat the oven to 100degrees fan-forced (or 120degrees top/bottom heat). line a baking sheet with parchment paper. beat egg whites half stiff, then gradually whisk in the sugar tablespoon by tablespoon (plus the salt and vanilla seeds in the end). beat at least for 2-3min longer until the consistence is thick and glossy, and the sugar is dissolved. spread 6 meringue on the parchment paper (each about 10cm-ø): place first a heaping tablespoon of meringue where the pavlovas should bake on your parchment paper (keep distance between) and spread to a circular shape. spoon the remaining meringue evenly to each meringue-circle and spread again a second layer, form a indentation in the center. bake the pavlovas for 90min on the second on the lower rack (second from bottom), then switch off the oven and leave the oven door opened a bit, so the meringues can cool down slowly. when they are completely chilled, loosen the meringues carefully with a spatula from the baking parchment. whip your cream and place it in the fridge until you start to serve. 
gooseberry-compote:
wash gooseberries and top and tail them. caramelize the cane sugar in a pan or pot, then deglaze slowly
with the redcurrant juice and stir until all sugar is dissolved. add the gooseberries and cook them for 2-3min until soft, then pour off the liquid into a small pot and heat again. dissolve the cornstarch in some water and stir to the the fruit sauce. cook the sauce until it turns to a nice thick sauce. 
serve:
arrange the the meringues on the plates, fill with some whipped cream, spread first gooseberries, then fruit sauce and top with shaved white chocolate. decorate with edible flowers. bon appétit!

letzte woche haben wir das foodmagazin essen&trinken zugeschickt bekommen und uns sofort von einem pavlova rezept inspierien lassen. dieses war allerdings mit dunkler schokolade gemacht (die laura ja leider nicht essen kann) und dazu gab es kirschkompott. also haben wir kurzer hand beschlossen das rezept zu ändern und einen anderen twist reinzubringen. wir wollten unbedingt unsere stachelbeeren aus dem garten verarbeiten, die waren nämlich fast schon überreif. also hat nora ein leckeres stachelbeerkompott gekocht und die pavlovas mit essbaren blüten, die wir von unserem gathering letzte woche noch übrig hatten, verziert. dieses rezept ist wirklich sehr simpel und leicht vorzubereiten, gleichzeitig aber einfach auch wahnsinng köstlich! wir haben uns sogar schon während des shootings die erste mini pavlova geteilt. ich liebe einfach den kontrast von der süßen pavlova und dem leicht säuerlichen stachelbeerkompott - einfach wunderbar! also probiert es aus, wir sind uns sicher euch wird es auch schmecken!


mini-pavlova mit stachelbeer-kompott
zutaten (für 6 stück)
mini-pavlovas:

4 gekühlte eiweisse (gr. m/l)

salz

200g zucker
1 vanilleschote
stachelbeerkompott:
400g stachelbeeren
40g rohrzucker
250ml roter johannisbeersaft (o. ä.)
15g speisestärke
ausserdem:
330 ml konditorsahne (35% fett oder schlagsahne)
weisse schockoladenraspeln (einfach von einer schokotafel mit einem glatten messer abschaben)
essbare blüten (wer mag und welche im supermarkt findet)

mini-pavlovas:
backofen auf 100grad celsius umluft (oder 120grad ober/unterhitze) vorheizen. ein backblech mit backpapier auslegen. eiweisse halbsteif schlagen, dann weiterschlagen und esslöffelweise zucker und eine prise salz dazugeben. mindestens 2-3min weiterschlagen bis der zucker sich aufgelöst hat und zum schluss das vanillemark unterrühren.
auf dem backblech 6 kreise à circa 10cm durchmesser streichen: zuerst einen gehäuften esslöffel eischnee auf die sechs positionen verteilen (abstand lassen!) und kreisförmig verstreichen, dann die restliche masse gleichmäßig auf die sechs kreise verteilen, nochmals kreisförmig verstreichen und eine vertiefung in der mitte formen. im backofen für 90min auf der 2. schiene von unten backen, dann backofen ausschalten und bei geöffneter ofentür abkühlen lassen (vorsichtig mit einem pfannenwender vom backpapier lösen). konditorsahne aufschlagen und kurz bis zum servieren in den kühlschrank stellen.
stachelbeerkompott:
stachelbeeren waschen und putzen (die enden abzupfen o. mit einer schere abschneiden). rohrzucker in einem topf oder pfanne karamellisieren, dann mit dem johannisbeersaft langsam ablöschen und rühren bis der zucker sich darin komplett aufgelöst hat. stachelbeeren hinzufügen und für 2-3min mitköcheln bis sie weich sind, dann den großteil der flüssigkeit in einen kleineren topf abgießen und nochmals erhitzen. die speisestärke mit etwas wasser anrühren und unter die fruchtsoße rühren. fruchtsoße bis zur gewünschten konsistenz eindicken lassen.
anrichten:
pavlovas auf die teller legen, mit schlagssahne befüllen, stachelbeeren auf der schlagssahne verteilen, etwas fruchtsoße darüber fließen lassen und mit schokoraspeln bestreuen. mit essbaren blüten dekorieren. bon appétit!

stuffed courgette flowers with a palm kale - quinoa salad & a gathering with friends

last friday we had a lovely little gathering with our dear friends rahel and lea. as i grew up with both of them, we have a very special connection and they will always have a special place in my heart. 
another friend from our small village in the countryside, elvira, set out this lovely vegetable garden and gave us some of her courgette flowers. she has so many vegetables and herbs in her garden (beetroot, potatos, chard, tomatoes, kohlrabi and many more..) it's amazing! 
we both really love courgette flowers - they are very delicious and so pretty!! as we wanted to create a different recipe (normally we stuff them with ricotta or mozzarella) we stuffed them with fresh goat cheese, horse radish and beetroot. you can eat them also as a starter, but we really recommend you to eat them with this delicous palm kale - quinoa salad. i think it's the best combination and my new addiction! we made it the day after again. so good! about the palm kale (i hope it's the right english translation) - have you ever heard of it before? we saw it for the first time in the organic supermarket and really wanted to try it. 
it's a special kale from italy and it's v e r y delicious. if you can't find it you can of course also substitute it with chard, spinach or any other kale. we hope you enjoy the recipe guys & have a lovely day!



ingredients for 4 persons:
8 courgette flowers
olive oil
salt
filling:
75g beetroot pre-cooked
150g goat cream cheese
50g grated gouda cheese
10g freshly grated horse radish (or more, taste in between)
1 egg
1 tsp mustard seeds (if you like)
1 dash of salt
quinoa with palm kale:
200g quinoa tricolore
10 big palm kale leaves
2 red onions
4 garlic cloves
olive oil
1 dash of nutmeg
1-2 tsp honey
3-4 stems fresh herbs (as you like - we took basil and savory )
50g almonds
salt

(also we served some colored carrots, which we baked for about 20min at 230 degrees celsius - mix them with olive oil and black sesame before; add some honey and salt just before they are done)

prepare the palm kale:
toast the almonds and chop roughly afterwards - set to one side for later.
chop garlic and onions and put together with some olive oil in a pan - set to one side for a moment.
fill a big pot half with water and bring to boil. wash palm kale and cut off the stems. cut the leaves into thin stripes and blanch for 5min, then drain. stir-fry the onions and garlic for 2min and add the palm kale and the fresh herbs. add some freshly grated nutmeg and fry for another 3min, add honey and season with salt. cover with a lid and set to one side. 
prepare the quinoa:
cook the quinoa in a pot with water as written on the packing instructions (about 15min).
stuffed courgette flowers:
preheat oven to 180degrees celsius top/bottom heat. 
if the goat cream cheese is very soft, drain your cheese with a kitchen towel before. purée goat cream cheese, beetroot, horse radish, egg and salt together. stir in mustard seeds and grated gouda cheese and fill the beetroot creme into a decorating bag (or even handier a cookie press). wash carefully the courgette flowers and pat them dry. open up carefully the flowers and remove the stamen with a small kitchen knife. brush the fruits and flowers of the courgette with a bit olive oil. fill the courgette flowers with the beetroot creme (it can be a bit difficult, be patient) and twist the ends of the petals, so the the flowers are closed again. place the stuffed courgette flowers on a baking dish, wish is brushed with olive oil. bake the stuffed courgettes flowers for 15-20min (second from the bottom rack) until the fruit of the courgettes is done (test with a fork or knife). 
serve:
mix quinoa, palm kale (maybe you have to heat the pan with the palm kale again), chopped almonds plus some olive oil and season, if necessary. arrange on the plates and place the stuffed courgette flower on top. spread some sea salt on the courgettes. bon appétit!

letzten freitag haben wir ein wunderbares kleines dinner mit unseren freunden rahel und lea genossen. ich bin mit den beiden zusammen aufgewachsen, wir haben fast unsere ganze kindheit zusammen verbracht. deshalb haben wir eine ganz besondere verbindung zueinander und sie werden immer einen großen platz in meinem herzen haben. eine andere freundin aus unserem kleinen dorf hier auf dem land, elvira, hat diesen wundervollen kleinen gemüsegarten angelegt und uns für unser dinner die schönen zucchiniblüten gegeben. sie hat so viele gemüsesorten und kräuter in ihrem garten (rote beete, kartoffeln, mangold, kohlrabi, etc. …) es ist einfach fantastisch! 
die zucchiniblüten lieben wir beide wirklich sehr - sie schmecken einfach köstlich und außerdem sehen sie schon so schön aus! da wir sie etwas anders als gewöhnlich zubereiten wollten (sonst füllen wir sie  gern mit ricotta oder morzerella) haben wir sie mit einer rote-beete-meerettich-ziegenfrischkäse-creme gefüllt. 
man kann sie einfach so als vorspeise geniessen oder aber (und das empfehlen wir sehr!) mit diesem köstlichen schwarzkohl-quinoa-salat. ich finde diese kombination schmeckt fantastisch, so gut, dass es bei uns am nächsten tag, gleich noch mal das selbe gericht gab. 
zum schwarzkohl: habt ihr von dem schon mal gehört? wir haben ihn jetzt zum ersten mal im biosupermarkt gesehen und er schmeckt wirklich sehr unglaublich gut. wenn ihr allerdings keinen bekommen könnt, ersetzt ihn im rezept einfach durch mangold, spinat oder eine andere kohlsorte. wir hoffen ihr lasst es euch schmecken und habt noch einen schönen sonntag!







zutaten für 4 personen:
gefüllte zucchini-blüten mit schwarzkohl-quinoa-salat & ein abendessen mit freunden
8 zucchiniblüten
olivenöl
salz
füllung:
75g rote beete (vorgekocht)
150g ziegenfrischkäse
50g kleingeriebener gouda
10g frisch geriebener meerettich (oder mehr, einfach zwischendurch probieren)
1 ei
1 tl senfkörner (wer mag)
1 prise salz
quinoa mit schwarzkohl:
200g quinoa tricolore
10 große blätter schwarzkohl
2 rote zwiebeln
4 knoblauchzehen
olivenöl
muskat
1-2 tl honig 
3-4 stengel frische kräuter (nach geschmack - wir haben basilikum und bohnenkraut verwendet)
50g mandeln
salz

(ausserdem gab´s noch bunte karotten aus dem ofen bei 230grad für etwa 20min gebacken - vorher mit olivenöl und schwarzem sesam gemischt; kurz vor ende der backzeit noch etwas honig und salz verteilen)

schwarzkohl vorbereiten:
mandeln in der pfanne kurz rösten und grob hacken, beiseite stellen.
knoblauch und zwiebeln fein hacken und in eine pfanne mit etwas olivenöl geben - kurz beiseite stellen.
einen großen topf zur hälfte mit wasser füllen und zum kochen bringen. schwarzkohl waschen und die strünke herausschneiden. blätter in schmale streifen schneiden. schwarzkohl 5min blanchieren und abgiessen. die pfanne mit zwiebel und knoblauch erhitzen und nach 2min den schwarzkohl und die frischen kräuter dazugeben. etwas muskat dazureiben und für 3min weiter braten lassen, dann den honig unterrühren und mit salz abschmecken. abdecken und beiseite stellen.
quinoa kochen:
quinoa nach verpackungsanleitung in einem topf mit wasser und salz kochen (etwa 15min).
gefüllte zucchiniblüten:
ofen auf 180grad ober-/unterhitze vorheizen.
falls der frischkäse sehr weich ist, das wasser in einem feinen geschirrtuch etwas ausdrücken. ziegenfrischkäse, rote beete, meerettich, ei und salz mit einem pürierstab pürieren. senfkörner und gouda unterrühren und creme in einen spritzbeutel (oder evt, noch handlicher gebäckspritze) füllen.
zucchiniblüten vorsichtig waschen und mit küchenpapier trockentupfen. die blüten vorsichtig aufbiegen und mit einem kleinen küchenmesser die staubgefäße bzw. stempel entfernen. mit einem backpinsel die zucchini-frucht und zucchiniblüte mit etwas olivenöl bestreichen. mit dem spritzbeutel die blüten befüllen (etwas geduld ist gefragt) und die enden der blüten zudrehen, dann die gefüllten zucchiniblüten in eine mit olivenöl gefettete auflaufform legen. im backofen auf der 2. schiene von unten für 15-20min backen bis die zucchinifrucht gar ist (einfach mit der gabel testen).
anrichten:
quinoa mit dem schwarzkohl (evt. nochmal kurz in der pfanne erwärmen) und den gehackten mandeln plus etwas olivenöl vermengen und abschmecken. auf den tellern verteilen und die zucchiniblüte darauf legen und etwas meersalz über die zucchinifrucht streuen. bon appétit!
