beetroot risotto with mushrooms and truffle pecorino

the first thing we saw, before we decided to make this recipe, were these crazy beautiful looking mushrooms. i`m not sure, what the correct english translation is, but i think they are called shimeji mushrooms. have you ever heard of them before? 
as we love beetroot, we decided to make this delicious beetroot risotto with the mushrooms. i totally love risotto, but it also always reminds me of a very uncomfortable situation: it was at my grandfather´s birthday last year and we celebrated in a restaurant with the whole family - which sounds like we would be a big family, but actually it was just my grandparents, my uncle, my dad and his girlfriend. anyways, i wanted to order a risotto and since parmesan cheese is the devil of histamine i kindly asked if they could cook it without. the waiter was SO extremly unfriendly, that i was totally shocked. he just laught at me, saying why would i order a risotto if i can´t have parmesan cheese?! very nice, right? so i ended up being shocked and angry and eating nothing. and who says that you can´t make a delicious risotto without parmesan cheese?! we used a  truffle pecorino in this recipe (we are so addicted!)  and i think it makes it even more delicious, so give it a try guys! 



ingredients:
300g beetroot
3-4 garlic cloves (unpeeled)
2-3 stems oregano
1 red onion
125g risotto rice
1,5 tl vegetable broth
500ml water
1 small piece ginger
1-2 tl liquid honey
100g weisser buchenpilz
1 prise nutmeg
1 prise chili powder
olive oil
some truffle pecorino

preheat oven to 200degrees celsius top/bottom-heat. peel the beetroots, cut into small cubes, mix with 1 tbsp olive oil (best by hand) and spread on a baking sheet covered with baking parchment. put the garlic cloves (unpeeled!) as well on the baking sheet and spread some oregano. bake for 40min at 200degrees celsius (or a bit longer, depends on firmness to the bite). in the end add spread the honey on the beetroot and bake for another 2min.
meanwhile chop the onion and ginger. bring water to boil and mix the vegetable broth with 500ml boiling water. put the onion and some olive oil into a pot and braise lightly for 1min, then add the risotto rice and stir for 2-3min before you add some of the vegetable broth and the ginger (turn to low heat). continue stirring constantly and when the vegetable broth evaporated, add some more of it. repeat that process until the risotto is done (maybe you have to add more boiling water). when the beetroot is done, stir in the risotto rice. cut the garlic cloves and press the soft garlic out, then stir into the risotto. salt the risotto, if needed. 
clean the mushrooms with kitchen paper and/or vegetable brush, cut into smaller pieces and fry for a few minutes in a pan with some olive oil. season with chili powder and nutmeg. 
serve risotto on a plate, garnished with some mushrooms and truffle peconrino and seasoned with a bit pepper.

das erste was wir gesehen haben, bevor wir uns entschieden haben dieses rezept zu kochen, waren diese wunderschönen weißen buchenpilze. habt ihr die schon mal gegessen? mir haben sie jedenfalls gleich auf den ersten blick gefallen und geschmacklich konnten sie auch überzeugen!
da wir rote beete über alles lieben, haben wir uns entschieden dieses rote-beete-risotto zu den pilzen zu kochen.
wir essen risotto wirklich sehr gerne, aber es erinnert mich auch immer an eine sehr unangenehme situation: wir haben im resaturant den geburtstag meines großvaters gefeiert und ich wollte mir ein risotto bestellen. aber parmesan käse (eigentlich in jedem risotto) ist ja bekanntlich der teufel bei histamin intoleranz, also habe ich freundlich gefragt, ob es möglich wäre auch ein risotto ohne parmesankäse zu bekommen.  der kellner war so unglaublich unfreundlich, dass ich einfach nur geschockt war. er hat einfach über mich gelacht und mich zynisch gefragt wieso man denn überhaupt auf die idee käme ein risotto zu bestellen wenn man keinen parmesankäse verträgt. sehr freundlich, oder? aber wer sagt schon, dass man ein risotto nicht ohne parmesankäse kochen kann?! wir haben für diese rezept jungen trüffel pecorino benutzt und es war einfach köstlich. 




2-3 stiele frischer oregano
1 rote zwiebel
125g risottoreis
1,5 tl gemüsebrühe
500ml wasser 
1 kleines stück ingwer
1-2 tl flüssiger honig
100g weisser buchenpilz
1 prise muskat
1 prise chillipulver
olivenöl
etwas trüffelpecorino

backofen auf 200grad ober/unterhitze vorheizen. rote beete schälen, in kleine würfel schneiden, mit 1el olivenöl vermischen (am besten mit den händen) und auf ein mit backpapier ausgelegtes backblech legen. die knoblauchzehen (ungeschält!) dazulegen und etwas oregano verteilen. bei 200grad für 40min  backen (evt. etwas länger, je nach bissfestigkeit der roten beete). zum schluss honig über der roten beete verteilen und für 2min weiterbacken.
währenddessen zwiebel und ingwer klein schneiden. gemüsebühe in 500ml kochendem wasser auflösen. zwiebel in einen topf geben, etwas olivenöl dazugiessen und kurz für 1min dünsten, dann risottoreis dazugeben und weiteranbraten für etwa 2-3min - ständig rühren. etwas gemüsebrühe und den ingwer dazugeben und weiterrühren. immer wieder etwas gemüsebrühe hinzufügen, wenn diese im topf verdunstet ist. bei kleiner hitze diesen prozess immer wieder wiederholen bis der reis bissfest ist (evt. noch mehr kochendes wasser hinzufügen und ständig rühren). zum schluss rote beete aus dem ofen nehmen und unter das risotto mischen. evt. salzen. die knoblauchzehen aufschneiden und die weiche knoblauchpaste herausdrücken und unter das risotto rühren.
den buchenpilz mit etwas küchenpapier oder einer gemüsebürste putzen, in kleinere stücke schneiden und etwas olivenöl in einer pfanne erhitzen. pilze hinzufügen und für ein paar minuten mit etwas chillipulver und muskat braten.
risotto anrichten, ein paar pilze garnieren, mit pfeffer würzen und etwas trüffelpecorino darüber raspeln.

Customer Service Excellence Ireland together with AIB, Skillnets and BASICC (Ballybofey and Stranorlar Integrated Community Company Ltd) are running a 4 night Customer Service Excellence Course for the Agri-Food sector. 

This course is subsidised but a nominal fee of €25.00 per person will apply to cover some of the cost of delivering the course.

morning rituals & blog hop


first of all: we have a new blog-design!! whooo! we waited way to long with changing that (we were planning it since several months now) and are more than happy. we hope you guys like it as much as we do. a special thank you to jakob wierzba for helping us. check out his work, he is so talented! 
we made the pictures for today´s post for the new series of lovely suus´ blog food bandits, called "morning rituals". find out all about our morning ritulas and the recipe for our all-time-favorite pancakes  at suus gorgeous blog now. 
another thing, that we wanted to do since a really looong time now is a blog hop. we never heard of it, before our dear instagram-friend christina greve invited us. christina lives in denmark and is a photographer as well. she gives photography workshops (have a look here) and we disovered her beautiful work on instagram just when we started with instagram too. 
so if you never heard of a blog hop as well, it basicly means, that you get the chance to introduce yourself a little bit better to your readers with answering 4 questions and also to mention two blogs you would like to introduce to your readers, so they can "hop around" other blogs.

so let´s start with the blog-hop-questions:
Why do we write?
we started the blog while i was feeling very bad, because of my histamine-intolerance. we realised how hard it is to find recipes that are low on histamine, so we thought it would be a good idea to start the blog and share ours. now, that i´m feeling better with my histamine-intolerance we focus on glutenfree recipes, but still you will find recipes that are low on histamine as well.
What are we working on?
ohh - we would love to share the exciting projects we are working on at the moment with you guys. but we have to be patient for a little bit longer. besides, we are doing a lot of jobs, that you never see here on the blog, because it´s either not realted to food or not a recipe, like shooting diy-tutorials, whisky or beer at the moment.
How does it differ from others in it´s genre?
all the recipes on our blog are glutenfree. every single one. and again from time to time there are also recipes, that are low on histamine, which is not the most usual thing i guess :)
What is my writing process?
it´s actually 99% me (laura) who is writing on the blog. nora is always busy with preparing the recipes and baking / cooking them, so i take the pictures, edit them and then write the blogpost. 

of course one of the blogs, that we want to introduce you now is suus blog: foodbandits.
as we already mentioned before, it´s just gorgeous and everybody should have a look at it!
we also discoverd her blog through instagram, just when we started with blogging as well. there is never a single recipe that doesen´t looks mouthwatering and the best thing is that a lot of suus recipes are even glutenfree! so if you don´t know suus blog already, you should´t miss foodbandits.
the second blog we want to introduce to you is cashew-kitchen. we just discoverd it a while ago and completely fell in love at the first side. the girl behind is agnes from stockholm. we really love her pictures and the delicious looking recipes. and agnes is also sharing some beautiful nature pictures from time to time. take a look here to find out more about agnes.

als allererstes: wir haben ein neues blog-design: whooo! seit monaten wollten wir das schon in angriff nehmen und haben viel zu lange damit gewartet...aber jetzt ist es endlich soweit (bis auf ein paar kleinigkeiten...) und wir sind mehr als glücklich. wir hoffen es gefällt euch genauso gut wie uns. ein besonderes dankeschön gilt  jakob wierzba der uns tatkräftig unterstützt hat. wir sind ja technisch völlig unbegabt und hätten das alleine nicht wirklich hinbekommen :) schaut euch mal seine arbeiten an, es lohnt sich!
die bilder aus dem heutigen post haben wir für die serie "morning rituals" auf suus wunderbarem blog foodbandits, aufgenommen.  alles über unsere morgendlichen rituale und das rezept zu unseren liebsten veganen und glutenfreien pancakes findet ihr heute also auf foodbandits. 
etwas, dass wir auch schon seit einer sehr langen zeit machen wollten, ist ein blog hop. wir hatten vorher noch nie davon gehört, bis unsere instagram-freundin christina greve und vor ein paar monaten dazu eingeladen hat.  christina lebt in dänemark und ist auch fotografin. sie gibt unter anderem fotografie workshops (schaut mal hier) und wir haben ihre wunderschönen arbeiten auf instagram entdeckt, genau zu dem zeitpunkt als auch wir mit instagram angefangen haben.
falls ihr vorher auch noch nie von einem blog-hop gehört habt, lasst es uns kurz erklären: in dem man 4 bestimmte fragen beantworten muss, gibt einem ein blog-hop die chance sich seinen lesern ein bisschen besser vorzustellen und außerdem kann man zum schluss zwei blogs vorstellen, sodass ihr die chance habt neue blogs kennenzulernen (falls ihr sie nicht sowieso schon kennt :) ) diese zwei blogs sind dann herzlich dazu eingeladen ebenfalls einen bloghop zu machen. klingt kompliziert, ist aber eigentlich ganz einfach. auf jeden fall noch mal ein herzliches dankeschön an christina für die einladung.

Warum schreiben wir?
wir haben begonnen den blog zu schreiben als ich mich durch die histamin-intoleranz gerade ziemlich schlecht gefühlt habe. auf der suche nach inspiration ist uns aufgefallen, dass es kaum histaminarme rezepte gibt, also dachten wir, es wäre eine gute idee einen blog zu schreiben und unsere rezepte mit euch zu teilen. jetzt, wo es mir mit der histaminintoleranz deutlich besser geht (und ich hoffentlich bald auf nimmerwiedersehen sagen kann :) ) konzentrieren wir uns mehr auf glutenfreie rezepte, aber posten sicherlich von zeit zu zeit auch histaminarme varianten. 
Woran arbeiten wir gerade?
ohh, wir wünschten wir könnten schon ein paar der aufregenden projekte an denen wir gerade arbeiten mit euch teilen. aber da müssen wir uns wohl noch ein weilchen gedulden. unabhängig davon haben wir gerade viele jobs von denen ihr so auf dem blog gar nichts mitbekommt, weil es entweder nichts mit essen zu tun hat, oder aber eben kein rezept ist, wie z.B. diy-tutorials, whisky oder bier zu fotografieren.
In wie fern unterscheidet sich euer blog von anderen?
all unsere rezepte sind glutenfrei. jedes einzelne. und wie schon gesagt, von zeit zu zeit posten wir auch histaminarme rezepte, ich denke dass ist momentan leider noch etwas ungewöhnlich.
Wie ist unser schreib-prozess?
eigentlich bin es zu 99% ich (laura), die hier schreibt. nora hat schon genug damit zu tun die rezepte vorzubereiten und sie dann natürlich auch zu kochen / backen, da übernehme ich neben dem fotografieren und fotos bearbeiten gerne auch das schreiben.

natürlich ist einer der blogs die wir euch heute vorstellen wollen, suus blog: foodbandits.
wie bereits erwähnt, ihr blog ist einfach wunderbar, wer ihn also noch nicht kennt, solltet ihr unbedingt rüber klicken.
auch suus blog haben wir durch instagram entdeckt und fast von anfang an mitverfolgt.
es gibt nie auch nur ein einziges rezept, welches einem nicht das wasser im mund zusammenlaufen lässt. und das beste: viele von suus rezepten sind sogar glutenfrei! also klickt euch schnell rüber zu  foodbandits.
der zweite blog, den wir euch heute vorstellen möchten ist cashew-kitchen. wir haben cashew-kitchen erst vor kurzem entdeckt und es war gleich liebe auf den ersten blick. agnes, die den blog schreibt, hat wirklich ein tolles gespür für die stimmung in ihren bildern und ihre rezepte sehen immer köstlich aus! außerdem postet agnes von zeit zu zeit auch schöne landschaftsaufnahmen - einfach wunderbar!

Who will represent Ireland and the UK in S.Pellegrino Young Chef 2015?

The first selection of finalists of the International S.Pellegrino Young Chef 2015 have been made.

Out of 3,620 participants in 191 countries and 20 world geographic areas there will only be 20 finalists. Four local chefs will now have to take part in a cook-off with 6 other chefs based around the British Isles to decide who will represent the region, identified in the competition as the UK/Ireland Geographical Area.


Mark Moriarty, Maria Elena Martinez Otero, Sarunas Godovan and Stephen Holland were chosen by ALMA Cooking School (the world's leading international educational and training centre for Italian Cuisine), and were picked from thousands of applications received from professional young chefs working in kitchens around the world.

What’s next? Each candidate will now cook a dish for their local jury members who will choose one winning entry to represent Ireland and the UK. Once chosen, the 20 Final Chefs will be paired with a young designer picked by Vogue Italia. The 20 chef/designer duos will then begin work on a unique collaboration that will see each designer create a unique piece inspired by the chef’s dishes.

The final dishes and designs will be presented, in June, at a Grand Final event held in Italy during Expo Milano 2015 where the winning entry for the S.Pellegrino Young Chef 2015 will be announced. There will also be a special prize awarded to The Best Chef/Designer Couple.

The four Irish chefs who will cook it out with some of the best young chefs in the UK and Ireland to see who will represent the region in the Final are:

Mark Moriarty is Sous Chef at Restaurant The Culinary Counter in Dublin.
Mark's dish is Celeriac Baked in Barley and Fermented Hay, Cured and Smoked Celeriac



Maria Elena Martinez Otero is Chef de Partie at Restaurant Four Seasons Hotel (InterCont) in Dublin
Maria's dish is Smoked Orange,Chocolate Heart, Green Tea Crumbs and Ricotta



Sarunas Godovan is a Chef at Restaurant Tankardstown House in Slane, Co Meath.
Sarunas' dish is Turbot on the Bottom of the Sea



Stephen Holland is Exec Sous Chef at Restaurant Lough Erne Resort in Enniskillen, Co Fermanagh.
Stephen's dish is Glenarm Whiskey Cured Salmon, Pickle Vegetables, Pistachio Bites

glutenfree pistachio rose cake

we always get asked a lot how we develop our recipes and where we find our inspiration. sometimes, we just go hungry to the supermarket and get so creative while seeing all the food, so out of this hunger a new recipe is born. sometimes we just get inspired while spending time on a beautiful market, or of course also while looking at magazines or cookbooks or other blogs...so much possibilities. but in most of the cases it all happens very spontaneously and one of us just has an idea of a certain combination. however, one thing is never differnt: even if i have an idea i could never transform that by myself and for me it´s a secret, how nora always makes it happen, that the cake or the dish looks like in my thoughts in the end. so much passion and patience, i really admire that!
this time i was really craving for a nice piece of cake, so i started thinking, what i would love to eat during the weekend.
as i already mentioned in the last post, i´m trying to eat some food, which is not low on histamine again, so this time i thought, why not having a cake with nuts. i love pistachios and i think they do taste great in combination with rose water. it´s not a secret, that we love flowers, if you follow us on instagram you might have noticed it already...so if there is rose water in the cake of course i also wanted to have rose blossoms on top of it.
if it would have been summer, we would just have picked the roses from our garden, which means that you could actually eat them. but as it is winter (it's so cold, where is the spring!?!) we just bought some at our favorite flower shop, so it´s only a decoration which you shouldn't eat.
this cake is so romantic, that we photographed it in our old barn as a contrast. the sun was shining so beautiful through the big windows that day and i really long for some sunlight on this grey sunday now. we hope you have a nice day and enjoy the recipe guys!










































































cake base:
4 eggs
100g sugar
80g rice flour
50g cornstarch
1 tl tartan baking powder
1 dash of salt
pistachios cream:
80g pistachios (peeled)
300ml whipping cream
2 tbsp sugar
1/2 vanilla bean
4g agaranta (vegetable gelling agent)
additional for the filling:
50g marzipan
80g pistachios (peeled)
rose water cream:
300ml whipping cream
4 el sugar
150g mascarpone
3-4 el rose water
candied rose petals:
edible rose petals
1 egg white
sugar

cake base:
preheat oven to 175degrees fan function (or 180degrees top/bottom heat). separate eggs.
first stir 35g of the sugar into the eggyolks, then whisk the eggwhites with the remaining sugar until stiff. gently fold the beaten egg whites in the eggyolks. mix the flour, baking powder, salt and starch in a separate bowl and sieve in 3 portions to the egg-mix - use a large spoon or similar - not a mixer!
line the springform pan completely with parchment paper - a bit higher then the springform pan sides, because the dough could grow a bit higher. fill the dough into the springform pan and bake for 25min at 175 degrees. then switch off the oven, leave the cake base inside for a while, so it can cool down slowly. take it out and leave it rest for 10min before you take off the springform pan and the parchment paper. let it cool down now completely on a cooling rack. 
divide the base, when it cooled down. use a long (bread)knife and make a few marks at the sides, where you want to cut it. then cut slowly along your marks.
pistachios-cream:
roast the pistachios in a pan and blend them afterwards in a mixer or with a immersion blender to "pistachios-dust". take 20g away for later decoration. whip 200ml cream together with the sugar and vanilla seeds. stir in the "pistachios-dust". then mix the remaining cream (100ml) with the agaranta in a small pot and bring to boil for 1 minute (look at the packing instruction). let cool off for a moment in a small bowl and stir in the pistachios-cream afterwards. 
built the cake:
chop roughly 50g pistachios and cut the marzipan into small cubes.
spread half of the pistachios-cream on the firt layer of the cake base (put the top of the cake base on the bottom, then add the middle part and on top the bottom of the cake base, but turned upside down, because the bottom side is more even), then spread the marzipan cubes on top and place the second layer of the cake base. spread the remaining pistachios-cream on it and and sprinkle the chopped pistachios on the cream. put the last cake base piece on top and leave in the fridge for at least 3 hours. 
whisk for the rose-water-cream the cream with the sugar and mix the mascarpone with the rose-water. then stir the mascarpone in the whipped cream and spread a first thin layer of rose-cream on the cake and fill the holes at the sides with the cream, so it becomes even.
leave the cake for 1 hour in the fridge (the cream as well), then spread a thick layer of cream on the cake and let cool for another hour in the fridge.
prepare rose petals:
whisk an egg white shortly, put sugar in a soup plate and line a baking sheet with parchment paper.
first coat each rose petal with egg white by using a silicon brush, then spread sugar on both sides of the petal and place it on the baking sheet. bake rose petals for 1hour (or a bit longer) at 50degrees celcius at fan function.
decorating:
first spread the remaining "pistachios-dust" on the cake top, then the leftover chopped pistachios and 
at last arrange the rose-petals on top - eventually you have to push them a bit into the cream.

wir werden so oft gefragt wie wir unsere rezepte entwickeln und  wovon wir uns inspirieren lassen. da gibt es so viele möglichkeiten...manchmal gehen wir einfach hungrig einkaufen und werden dabei so kreativ, dass aus dem hunger oder appetit herraus ein neues rezept entsteht. oder wir laufen über einen schönen markt und lassen uns von all den eindrücken, neuen gemüsensorten etc. inspirieren. natürlich gilt das gleiche für magazine, kochbücher und andere blogs...aber in den meisten fällen passiert das ganz spontan und einer von uns hat einfach eine idee oder appetit auf eine besondere kombination. wie auch immer, eins ist immer gleich: auch wenn ich vielleicht eine idee habe, könnte ich das so nie in die tat umsetzten. es ist ein kleines geheimnis für mich, wie nora es jedes mal schafft, dass ein kuchen oder ein gericht im endeffekt genauso aussieht wie ich es mir vorgestellt habe. sie ist so geduldig und leidenschaftlich, das bewundere ich sehr!  
als das rezept für diesen kuchen entstanden ist, hatte ich total appetit auf eben solchen. wie bereits im letzten post erwähnt, versuche ich in letzter zeit immer wieder mehr (wenn auch vorsichtig!) ein paar lebensmittel zu probieren, die nicht histaminarm sind. bisher klappt das ganz gut, also dachte ich diesmal, warum nicht nüsse im kuchen?! ich liebe pistazien und finde sie schmecken köstlich in kombination mit rosenwasser.
wer uns auf instagram folgt, hat vielleicht schon etwas von unser großen blumen-liebe mitbekommen, wenn also schon rosenwasser im teig ist, mussten auch unbedingt rosenblüten on top. wäre jetzt sommer, hätten wir sie einfach im garten gepflückt und dann hätte man sie sogar mitessen können. da es aber leider immer noch grau, verschneit oder eher vermatscht und kalt ist und der frühling in weiter ferne scheint, haben wir die rosenblüten in unserem lieblings-blumenladen gekauft und sie sind leider nur dekoration und sollten lieber nicht mitgegessen werden.

da der kuchen schon fast kitschig ist, haben wir ihn als kontrast in unserer alten scheune fotografiert. die sonne hat an dem tag so wunderbar durch die großen fenster geschienen, dass wir uns an diesem grauen sonntag morgen sehr nach etwas licht sehnen.

pistazientorte mit rosenwasser und kandierten rosenblättern
boden:
4 eier
100g zucker
80g reismehl
50g speisestärke
1 tl weinsteinbackpulver
salz
pistaziencreme:
80g pistazien (geschält)
300ml schlagsahne
2 el zucker
1/2 vanilleschote
4g agaranta (pflanzliches geliermittel)
zusätzlich für die füllung:
50g marzipan
80g pistazien (geschält)
aussenschicht:
300ml schlagsahne
4 el zucker
150g mascarpone
3-4 el rosenwasser
kandierte rosenblüten:
essbare rosenblüten
1 eiweiss
zucker

boden:
ofen auf 175grad umluft (oder 180grad ober/unterhitze) vorheizen. eier trennen. das eigelb mit 35g des zuckers verrühren und leicht aufschlagen. dann das eiweiß mit dem restlichen zucker zu eischnee aufschlagen. den eischnee vorsichtig unter das eigelb geben. in einer separaten schüssel das mehl mit der speisestärke, dem backpulver und einer prise salz vermischen, dann zu dem eigemisch sieben und vorsichtig mit einem löffel unterheben. eine springform komplett mit backpapier auskleiden - am besten einen etwas höheren backpapierrand lassen, da der teig etwas höher als die springform-höhe werden könnte. den teig in die springform füllen und bei 175grad umluft 25min backen, dann den backofen ausschalten, aber den boden noch etwas im ofen lassen, sodass er langsam abkühlt, dann erst herausnehmen, 10min abkühlen lassen, die springform und das backpapier entfernen und auf einem kuchengitter abkühlen lassen. den boden erst zerteilen, wenn er eine weile abgekühlt ist. ein langes (brot)messer benutzen und vorher markierungen mit dem messer machen, wo der boden geteilt werden soll. dann entlang dieser markierungen langsam schneiden.
pistaziencreme:
pistazien kurz in der pfanne rösten.
pistazien mit einem pürierstab/mixer zu "pistazien-staub" zerkleinern. 20g abtrennen und für deko später beiseite stellen. 200ml schagsahne mit dem zucker und dem mark der vanilleschote aufschlagen. nun den "pistazien-staub" unterrühren. die restliche 100ml schlagsahne mit dem agaranta in einem kleinen topf verrühren und für 1min aufkochen (s. verpackungsanleitung). kurz abkühlen lassen (am besten in einer kleinen schüssel) und dann unter die pistaziencreme heben. 
torte zusammensetzen:
50g pistazien grob hacken (etwa die hälfte davon für deko beiseite stellen), marzipan in kleine würfel schneiden.
ersten boden mit hälfte der pistaziencreme bestreichen (den bodendeckel als untersten boden der torte nehmen, dann mittelstück als zweiten boden verwenden und zum schluss den untersten teil falsch herum auf die torte setzen, da dieser am ebenmäßigsten ist.), dann marzipan-würfel darauf verteilen. zweiten boden darüber platzieren. mit restlicher pistaziencreme bestreichen und mit pistazienstücken bestreuen. den letzen boden darauf legen, mit frischhaltefolie abdecken und für min. 3stunden in den kühlschrank stellen.
für die aussenschicht die schlagsahne mit dem zucker aufschlagen, mascarpone mit dem rosenwasser verrühren und anschliessend die mascarpone unter die sahne heben. eine erste dünne schicht sahne an der torte verstreichen und gleichzeitig kleine lücken  an der seite füllen. torte für 1stunde in den kühlschrank stellen (die creme auch), dann die zweite und dickere schicht sahnecreme verteilen und nochmals für 1h in den kühlschrank stellen. 
rosenblätter vorbereiten:
ein eiweiss verquirlen, einen tiefen teller mit zucker bereitstellen und ein backblech mit backpapier auslegen. rosenblätter nacheinander zuerst mit einem silikonpinsel mit eiweiß bestreichen und dann mit zucker bestreuen und auf das backblech legen. rosenblätter für 1stunde (oder etwas länger) bei 50grad umluft backen. 
dekoration:
zuerst den beiseite-gestellen "pistazienstaub" auf der torte verteilen, dann die übriggebliebenen pistazienstücke verteilen und die kandierten rosenblätter auf der torte verteilen - evt. leicht in die creme eindrücken.
