poached pears in elderberry juice with homemade vanilla sauce

we photographed these pictures almost two weeks ago now, when it was still summer but you could already smell that autumn is in the air. we started to get up very early this summer, mainly to be prepared for the short days in winter with so little time and light to shoot but also to enjoy the wonderful morning light which i think is so special in summer. and especially the morning when we picked these pears the light was just stunning. we basicly jumped out of bed when we could see the first sunbeams, just put a cardigan over, made a coffee and direcly went to my father house to pick pears and apples and also some elderberries. he has so many old and beautiful apple and pear trees in his garden, it's such a pleasure and we are so lucky each year to get a lot of them.
in the afternoon nora made a simple and delicious elderberry juice and these poached pears with a homemade vanilla sauce. we already posted the recipe last year, as part of a gathering-shooting, but we felt like it didn't got enough attention as it's simply so delicious! we hope you guys enjoy it and hurry up as the elderberries are not that long in season anymore :)






poached pears in elderberry juice:
4-5 pears
500ml elderberry juice
1-2 tbsp lemon juice
100g rice syrup (or maple syrup...)
1 tsp cinnamon
2 star anise
8 juniper berries
vanille sauce:
300ml milk
200ml heavy cream
1 vanilla bean
3 egg yolks
80g sugar
extras:
a few chopped hazelnuts

(tip: you can prepare the dish a couple of hours before your serve it or already the day before - just warm the pears and vanilla sauce before you want to serve it)

elderberry juice
(please use only ripe elderberries, which are "black" - still green or light red ones are not ripe and shouldn't be used! elderberry juice can stain your clothes, so better wear dark colours.) 
remove the berries with a fork from the stems and collect them in a big bowl. when you've finished that, add enough water, so the ripe berries can sink and some left unripened berries will float on the water surface and you can easily sieve them. now wash the berries in a sieve, put them into a big pot, add the water. bring the elderberries to boil and let simmer for around 5-10min while stirring constantly. strain the berries and juice with a food mill or clothstrainer. 
poached pears in elderberry-cassis juice:
mix elderberry juice, lemon juice, rice syrup, cinnamon, star anise and juniper berries in a small saucepan. peel pears quickly (try to peel/shape the pears nicely - you eat with your eyes first), cut the bottom even, so they can stand straight later in the bowls. place the pears into the saucepan. boil for 15-25min or until pears are tender - varies on the size of the pears. let the pears allow to infuse in the juice until 20min before you serve them. remove the pears from the saucepan and reduce the remaining juice on medium heat until its a nice thick sauce.
vanille sauce:
let boil milk, heavy cream, vanilla pulp and vanilla bean, then let infuse for 10min before you remove vanilla bean. whisk the egg yolks with the sugar for 2-3min until creamy. stir 1/4 of the vanilla-milk in the egg-yolk-sugar-mix, then stir back into the saucepan with the remaining vanilla-milk. warm slowly the sauce and stir constantly for 10min on low heat (otherwise the egg yolk might curdle) until the sauce turns creamy. and if you don´t serve the vanilla sauce right afterwards you can fill it into a muesli bowl and place a piece of clingfilm right on top of the sauce to prevent skin forming.
serve:
first fill some vanille sauce in the bowls, then arrange the pear right in the center, add some elderberry sauce and finish with chopped hazelnuts.

fast zwei wochen ist es jetzt schon her, dass diese bilder entstanden sind. es war noch richtig sommerlich draußen auch wenn man den herbst schon in der luft riechen konnte. diesen sommer haben wir damit angefangen sehr früh aufzustehen, hauptsächlich um uns auf die kurzen wintertage mit wenig zeit und licht zum fotografieren vorzubereiten aber natürlich auch um das wunderbare morgenlicht zu genießen das gerade im sommer, wie ich finde, sehr besonders ist! und gerade an diesem morgen, als die birnen-fotos entstanden sind war es einfach fantastisch! wir sind morgens regelrecht aus dem bett gesprungen als wir die ersten sonnenstrahlen sahen, haben uns einfach nur einen cardigan übergeworfen, einen kaffee gekocht und sind dann direkt zu meinem vater in den garten gegangen um birnen und äpfel zu pflücken. er hat so viele schöne und alte obstbäume in seinem garten und glücklicherweise dürfen wir jedes jahr etwas davon ernten.
am nachmittag hat nora dann einen ganz simplen und köstlichen holunderbeerensaft gekocht, die birnen darin pochiert und eine wunderbare vanille-soße zubereitet.
das rezept haben wir zwar schon letztes jahr mit euch geteilt, aber da war es part eines ganzen menüs und hat definitiv nicht genug aufmerksamkeit bekommen. wir hoffen also ihr lasst es euch schmecken und haltet euch ran noch holunderbeeren zu bekommen, die saison ist nämlich fast vorbei :) 









holunder-birnen an vanillesauce mit haselnuss

holunderbeeren-saft (ergibt ungefähr 700ml saft)
750g holunderbeeren (nach dem entdolden)
flotte lotte (oder ein passiertuch/küchentuch)
holunder-birnen
4-5 birnen
500ml holundersaft
1-2 el zitronensaft
100g reissirup (oder ein anderer sirup, z.b. ahornsirup oder zucker..)
1 tl zimt
2 sternanis
8 getrocknete wacholderbeeren
vanillesoße
300ml milch
200ml schlagsahne
1 vanilleschote
3 eigelb
80g zucker
extras
ein paar gehackte haselnüsse
(tipp: man kann beides sehr gut ein paar stunden vor dem servieren vorbereiten oder sogar am vortag - kurz vor dem servieren einfach wieder etwas erwärmen.)

holunderbeerensaft
(bitte nur reife holunderbeeren verwenden, die "schwarz" sind, noch grüne oder hellrote beeren sind unreif und sollten gemieden werden. holunderbeeren färben sehr stark, am besten dunkle kleidung tragen.)
die beeren mit einer gabel von den dolden befreien und in einer großen schüssel sammeln. die schüssel mit wasser füllen, sodass sie ein gutes stück bedeckt sind und absinken können. dadurch schwimmen vereinzelte unreife beeren (grün, rötlich) auf der wasseroberfläche und man kann sie einfach absieben. die reifen beeren nun gut in einem sieb waschen, in einen großen topf füllen,  wasser dazugeben, beeren aufkochen und etwa 5-10min köcheln lassen, ständig umrühren. beeren und flüssigkeit mit einer flotten lotte oder einem küchentuch passieren.
holunder-cassis-birnen:
cassis-sirup, holundersaft, zimt und wacholderbeeren in einen kleinen topf geben und verrühren. birnen zügig schälen ("schön" schälen - das auge ist mit), die unterseite der birnen gerade schneiden, sodass sie später in der schüssel gerade stehen. birnen in den topf setzen. für 15min köcheln lassen bis sie weich sind - das variiert je nach größe der birnen. bis zum servieren im sud liegen lassen.
vanillesoße:
milch, schlagsahne, vanillemark und vanilleschote aufkochen, dann noch 10min ziehen lassen, danach vanilleschote entfernen. eigelb mit zucker 2-3min aufschlagen. 1/4 der warmen milch-sahne-mischung in das eigelb-zucker-gemisch einrühren. eigelb-mischung in den topf mit der milch-sahne-mischung einrühren. topf ganz langsam erwärmen und 10min bei niedriger hitze ständig rühren (sonst gerinnt das ei) bis die soße etwas dicker wird. falls man sie nicht sofort serviert, kann die vanillesoße in eine schüssel umfüllen und einfach frischhaltefolie direkt auf die vanillesoße legen, dann kann keine haut entstehen.  
anrichten:
zuerst etwas vanillesoße in die schüsseln giessen, dann die birnen in die mitte setzen, etwas holunderbeersauce darauf verteilen und mit gehackten haselnüssen garnieren.

a little christmas gathering: glutenfree pumpkin-brussel sprouts quiche and a cinnamon panna cotta

we've already told you in a blogpost and also on snapchat, that we are pretty excited about christmas this year. there is no particular reason for it, we just simply enjoy the festive mood, that is so special and unique for this time of the year. it has been a very busy and eventful time for us and even if there is still a lot of work waiting before the new year arrives we really enjoy it to slow down a little bit, listing to christmas songs and fill the house with delicious christmas smells while baking and cooking in the kitchen.
yesterday our lovely friends rahel & lea came over again to spend a cozy afternoon together. 
we decorated the table with gorgeous flowers and fir sprigs from one of our favorite flower stores in berlin: blumenbett.
regarding the food we wanted to cook something simple yet delicious so we decided to make a glutenfree pumpkin-brussel sprouts quiche as a main dish and a crazy delicious cinnamon panna cotta with pomegranate-mulled-wine sauce and burnt sugar almonds. really thinking about to make this on christmas eve as well, as we always prepare the dessert for my family. but let's see, there are still so many christmas desserts and cakes on my mind that i'm not ready to decide yet.

but first it's time for delicious food now - we hope you will enjoy it as much as we did! 



ingredients for a 28cm-ø quiche-pan


pastry
250g buckwheat flour
125g butter cold
1 dash salt (or you take salted butter)
1 large egg (size m/l)
filling
200ml coconut milk
4 eggs
50g feta
300g brussel sprouts
1/2 sized hokkaido-pumpkin (the whole pumpkin was about 1,5 kg)
1 red onion
2 garlic cloves
1 chili pepper
1 tl vegetable broth
1 dash of nutmeg
2 sprigs rosemary
red pepper
paprika powder
olive oil
salt

pastry:

combine roughly the buckwheat flour, salt and cold butter (cut into small cubes) by hand in a bowl. add the egg and knead for 2min. if the dough looks still to crumbly add a bit icecold water (by tablespoons). shape the dough to a flat brick, cover with cling film and put for minimum 1 hour into the fridge. butter and flour a quiche pan. roll out the dough between 2 layers of cling film (dust with flour). the pastry should be about 4mm thick. overturn the pastry together with the bottom layer of cling film on the quiche-pan, then remove cling film. press on the pastry and cut off remaining parts at the rim. patch gasps with the pastry leftovers and prick crust several times with a fork.
allow the pastry to rest for 1hour before it get baked.
prepare the filling meanwhile:

preheat oven to 230degrees celsius top/bottom heat. half pumpkin, remove seeds and skin and cut into 4cm thick wedges. spread with a bit olive oil and paprika powder and bake for 20min, then arrange on the crust. (afterwards turn oven down to 180degrees celsius)
in the meantime start with the brussel sprouts: remove outer leaves. chop onion, garlic and chili pepper and fry in olive oil for 1minute, add the brussel sprouts for 2-3min, then add some broth just until covered. cook 5-7min with lid on top and add nutmeg. take out the brussel sprouts and boil the broth until a little thick amount is left. spread the brussel sprouts on the crust. mix coconut milk, eggs, vegetable broth and a bit salt and pour on the quiche. place some feta dices on top and the rosemary sprigs. bake for 30-35min until the egg-mixture is set (when a knife inserted near center comes out clean)leave the quiche to cool down for 15min on a cooling rack until you serve the pieces with a bit red pepper.


ingredients (for 4 persons)
cinnamon-panna-cotta
600ml heavy cream
70g sugar
1,5 tsp cinnamon
1 vanilla bean
1 pk agar-agar (6g)
pomegranate-mulled-wine sauce
100ml fresh pressed orange juice (2-3 oranges)
200ml pomegranate juice
1-2 tbsp sugar
1 teabag mulled wine spice
2 star anise
1 tsp cornstarch
extra:
1 handful burnt sugar almonds
orangenfilets (von 1-2 orangen)

cinnamon-panna-cotta:
fill 500ml heavy cream (set 100ml aside in a small bowl), sugar, cinnamon, vanilla pulp and vanilla bean in a sauce pan and boil for 8-10min (in the end remove vanilla bean). mix the agar-agar with the remaining heavy cream, add to the pot, boil for 2min and stir constantly. remove from the stove, fill into ramekins, let cool down for 30min, cover with cling film and place for minimum 3hours in the fridge (or overnight). take out from the fridge 20min before you serve, place ramekins in warm water for 30seconds, loosen the edge carefully with a butter knife and turn upside down on serving plates. 
pomegranate-mulled wine-sauce:
press oranges, sieve the juice and bring to boil together with the pomegranate juice, star anise and sugar in a sauce pan. remove from the stove and add a mulled wine spice-tea bag and let infuse for 10min. remove tea bag and boil juice for 5-10min, then remove star anise. mix 2-3 tbsp sauce in a small bowl with the cornstarch, stir into sauce until sauce thickens.  
serving:
pour a bit pomegranate-mulled-wine sauce on top of the cinnamom-panna-cotta, then decorate with whole and chopped burnt sugared almonds and orange slices.

schon in einem unserer letzten posts und auch auf snapchat haben wir euch davon erzählt wie sehr wir uns dieses jahr auf weihnachten freuen. das hat gar keinen bestimmen grund und vielleicht ist es auch gar nicht unbedingt weihnachten an sich sondern viel mehr genießen wir diese festliche zeit davor, die dieser zeit des jahres so eigen ist. we've already told you in a blogpost and also on snapchat, that we are pretty excited about christmas this year. es war ein sehr aufregendes und arbeitsintensives jahr für uns und auch wenn in der kurzen zeit bis zum nächsten jahr noch einiges an arbeit auf uns wartet, genießen wir es sehr, mal einen gang zurück zuschalten, fast ausßschließlich weihnachtsliedern zu lauschen und das haus und die küche beim backen und kochen mit lauter weihnachtsdüften zu füllen. 
gestern kamen unsere freunde rahel & lea mal wieder zu besuch und gemeinsam haben wir den 3ten advent gefeiert und ein kleines weihnachtsdinner zusammen genossen.
den tisch haben wir mit schönen schneerosen, tannengrün und eukalyptus dekoriert, alles aus unserem liebsten blumenladen in berlin: blumenbett.
hinsichtlich des essens, wollten wir etwas kochen das simpel und natürlich trotzdem köstlich ist und haben uns für eine glutenfreie kürbis-rosenkohl quiche entschieden und als dessert gab es dieses wunderbare zimt-panna cotta mit granatapfel-glühwein-soße, gebrannten mandeln und orangenfilets .
ich denke sogar darüber nach, das panna cotta als dessert am weihnachtsabend zu machen (wir sorgen nämlich immer für das dessert bei meiner familie an weihnachten) aber mir schwirren noch so viele andere weihnachtsdesserts und kuchen im kopf umher, das ich mich unmöglich schon entscheiden kann. apropos entscheiden: mit hilfe eines zufall generators haben wir die gewinnerin von unserem give-away ausgelost und es ist: rania maria. herzlichen glückwunsch!! wir hoffen unser tortenständer bekommt ein schönes neues zu hause :) und an alle anderen die teilgenommen haben: tausend dank!! wir waren überwältigt von eurem positiven feedback und all den schönen kommentaren!
aber jetzt last uns endlich zum essen kommen - wir hoffen ihr lasst es euch genauso gut wie wir schmecken.


zutaten für eine quiche-form 28cm ø
mürbe-teig:

250g buchweizenmehl
125g kalte butter
1 prise salz (oder gesalzene butter verwenden)
1 ei (gr. m/l)
füllung:
200ml kokosmilch
4 eier
50g feta
300g rosenkohl
1/2 mittelgroßer hokkaido-kürbis (gesamtgewicht kürbis ca. 1,5kg)
1 rote zwiebel
2 knoblauchzehen
1 chillischote
1 tl gemüsebrühe
etwas muskat
2 zweige rosmarin
etwas roter pfeffer 
paprikapulver
olivenöl
salz

mehl, salz und butter (in kleine würfel geschnitten) in einer schüssel mit den händen zügig verkneten. das ei unterkneten, falls der teig noch etwas zu bröselig ist, etwas kaltes wasser (esslöffelweise) dazugeben und unterkneten. teig zu einem flachen ziegel formen und in frischhaltefolie verpackt für min. 1h in den kühlschrank stellen. eine quicheform buttern und mehlen. teig zwischen zwei (mit mehl bemehlten) lagen frischhaltefolie dünn ausrollen (etwa 4mm dick) und kopfüber mit der unteren lage frischhaltefolie auf die quicheform stürzen und folie abziehen. teig andrücken und überstehende ränder abschneiden (da der teig etwas instabil sein kann, einfach die ränder oder löcher mit übrigem teig ausbessern). boden mit einer gabel mehrmals einstechen, dann tarteboden 1h ruhen lassen.
währenddessen füllung vorbereiten:
backofen auf 230grad ober-/unterhitze vorheizen. kürbis halbieren, schale und kerne entfernen und in 4cm dicke spalten schneiden. mit etwas olivenöl und paprikapulver bestreichen und auf ein backblech mit backpapier legen. für etwa 20min im ofen vorrösten, dann auf dem quicheboden anordnen.  (anschliessend ofen auf 180grad runterdrehen.) währenddessen der kürbis im ofen ist, rosenkohl putzen (die äusseren blätter entfernen). zwiebel, chillischote und knoblauch kleinschneiden und in etwas olivenöl andünsten. den rosenkohl hinzufügen und kurz anbraten, dann brühe hinzufügen bis der rosenkohl fast bedeckt ist. 5-7min mit geschlossenem deckel kochen und muskat hinzugeben, dann rosenkohl herausnehmen und brühe zu einem dickflüssigen sud einkochen. rosenkohl auf dem tarteboden verteilen. kokosmilch, eier, sud und etwas salz verrühren und auf den tarteboden giessen. feta verteilen und rosmarinzweige auf die quiche legen, dann für 30-35min bei 180grad backen bis das ei gestockt ist (die quiche ist fertig, wenn am messer keine flüssigkeit zurückbleibt, wenn man hineinsticht). quiche für 15min auf einem kuchengitter ruhen lassen, dann lauwarm mit etwas rotem pfeffer servieren. 



zimt-panna-cotta mit weihnachtlicher granatapfel-glühwein-soße (alkoholfrei)

zutaten (für 4 personen)
zimt-panna-cotta
600ml konditorsahne (oder schlagsahne)
70g zucker
1,5 tl zimt 
1 vanilleschote
1 pck. agaranta (6g)
granatapfel-glühwein-soße
100ml frisch gepresster orangensaft (2-3 saftorangen)
200ml granatapfel-saft
1-2 el zucker 
1 teebeutel glühweingewürz
2 sternanis
1 tl maisstärke
extra
1 handvoll gebrannte mandeln
orangenfilets (von 1-2 orangen)

zimt-panna-cotta:
konditorsahne (100ml in einer kleinen schüssel übrig lassen), zucker, zimt, vanillemark und vanilleschote in einem kleinen topf aufkochen und 8-10min etwas einköcheln lassen (gegen ende vanilleschote entfernen). übrige konditorsahne mit agaranta verquirlen, in den topf geben und unterrühren. für 2min köcheln lassen - dabei ständig rühren. vom herd nehmen und in kalt ausgespülte förmchen füllen. gläser für 30min ruhen lassen, abdecken und im kühlschrank für min. 3stunden kühlen (o. über nacht). 20min vor dem servieren aus dem kühlschrank nehmen, für 30sek in ein warmes wasserbad stellen, mit einem buttermesser vorsichtig den rand lösen und auf einen teller stürzen. 
granatapfel-glühwein-soße:
orangen pressen, saft durch ein sieb giessen und mit granatapfelsaft, sternanis und zucker in einem topf aufkochen und vom herd nehmen. glühweingewürz-teebeutel 10min darin ziehen lassen, entfernen und saft für 5-10min köcheln lassen, dann die sternanis entfernen. etwas saft abnehmen und in einer kleinen schüssel mit stärke verrühren, zurück in den topf geben und unterrühren, sodass die soße andickt.
servieren:
zimt-panna-cotta mit granatapfel-glühweinsosse begiessen, mit ein paar gehackten und ganzen gebrannten mandeln und orangenfilets dekorieren.

Macarons variations: blueberry-vanllia & vanilla-elderberry

first of all: thank you so much for all your lovely words and your support for our last post! it means a lot to us and we are more than happy that you like our cake stand as well!! we are still so excited and can't wait to share more news with you soon.
but let's talk about today's recipe now: believe it or not, but we made macarons for the first time! 
the original recipe is from our friend linda's first book and it worked out so well!! we changed the flavours a little bit and made one version with blueberry and vanilla and one with elderberry and vanilla. we love the elderberry-season so much and could eat elderberries with almost everything right now. the best thing is, that they boost your immune system, because they contain a lot of vitamin c, which is so helpful around this time of the year when almost everyone get's a cold. 
another favorite ingredient  is the blueberry powder that we brought from our holiday's in denmark. everything looks even more beautiful with that powder on top, you have to stop us at some point when we start using it in almost every new recipe. there is also a golden powder (christmas is coming soon) just to warn you already :D

ingredients for the macarons-shells:
100-110g egg whites (we took 102g)
100g ground almonds
200g powdered sugar
4 tbsp sugar
1 vanilla bean
1,5 tsp blueberry powder (or gel food coloring for the blueberry-vanilla-macarons; our blueberry-powder is from mill&mortar)
vanilla-white-chocolate-cream:
60g white chocolate
1 vanilla bean
75g heavy cream
elderberry cream:
150ml elderberry juice (incl. some lemon juice if you like and can tolerate citrus)
65g white chocolate
80ml heavy cream
1 pk agar-agar

prepare the macarons-shells:
separate the eggs the day before you will use them, cover the eggwhites with clingfilm and leave outside the fridge so they will have room temperature. line two baking sheets with silicone macaron-mats or baking parchment (you can draw 2-euro-coin circles (about 1-inch) on the baking parchment - leave some space between circles).
blend ground almonds and powdered sugar and process in a food processor until finely ground. sift through a sieve and put away the grainy remains. beat the egg whites until foamy, then add gradually the sugar and vanilla pulp - beat 3-4min longer. fold in the almond-powdered sugar mix with a silicone spatula or similar, fill about half of the batter into another mixing bowl and fold in the blueberry powder. stir the batter slowly until it looks like a thick paste and runs in a thick ribbon from the the spatula (don´t stir too much!). fill the blueberry batter into a decoration bag with a round decorating tip (7-9mm-ø) (cover the tip with clingfilm, so the batter cannot leak while you fill the decorating bag) and start to pipe the batter on the baking parchment (or silicone mat - pipe in the size of the circle, then they should "melt" a bit and increase their size). then stir the vanilla-macaron-batter and fill into another decorating bag and pipe on the other baking parchment. let the batter on the baking sheets rest for 30-60min until a "skin" has formed. preheat the oven to 150 degrees celsius (we took 140 degrees - depends on your oven) and bake the one baking sheet after the other for 11-13min (check constantly after 11min, so the macarons don´t get too brown - press lightly on the top, if the skin feels stable and is not cracking they are done). let cool down completely before you remove them from the baking parchment. 
vanilla cream:
chop the white chocolate finely. stir the vanilla pulp in the heavy cream and let boil. let cool down for 1min, then pour over the chopped chocolate and stir with a whisk until the chocolate has melted completely and you have a nice smooth cream. let the cream chill for a while, then fill into a decorating bag with round tip and fill the blueberry-macarons (twist the shells a bit when you press them together). 
dust with some blueberry powder and allow to mature overnight in the fridge. 
elderberry cream:
chop the white chocolate finely. let the heavy cream boil, then cool down for 1min. pour over the chopped chocolate and stir with a whisk until the chocolate has melted completely and you have a nice smooth cream. stir the agar-agar into 100ml elderberry juice and boil for 1min, let cool down for a moment, then stir in the remaining 50ml elderberry juice, then the white chocolate cream. let the cream chill for a while until it turns a bit more firm, then fill into a decorating bag with round tip and fill the vanilla-macarons (twist the shells a bit when you press them together). allow to mature overnight in the fridge.

es bedeutet uns wirklich viel und wir sind mehr als glücklich, dass euch unser kuchenständer so gut gefällt. wir sind immer noch ganz aufgeregt und können es kaum erwarten bald weitere neuigkeiten mit euch zu teilen.
aber jetzt zum heutigen rezept: ob ihr's glaubt oder nicht, wir haben tatsächlich zum ersten mal macarons gemacht!
das basis rezept ist aus dem ersten buch unserer freundin linda und es hat natürlich wunderbar funktioniert! wir haben die geschmacksrichtungen etwas geändert und eine version mit blauber-vanille und eine andere version mit holunderbeer-vanille kreiert. wir sind gerade ganz verrückt nach holunder und könnten momentan fast jedes gerricht damit veredeln. das beste ist, dass holunder auch noch das immunsystem stärkt, da die beeren so viel vitamin c enthalten. sehr praktisch, wo es jetzt so langsam kühler wird uns fast jeder erkältet ist. 
noch ein lieblingszutat momentan ist das blaubeer puder, welches wir von unserer reise nach dänemark mitgebracht haben.
alles sieht einfach noch viel schöner aus mit blaubeerpulver! ihr müsst uns stoppen falls wir anfangen sollten, das pulver in jedem unserer neuen rezepte zu verwenden. wir haben übrigens auch ein goldenes puder (weihnachten steht ja schon fast vor der tür) gekauft, nur um euch schon mal vorzuwarnen :D

macarons-variationen: blaubeer-vanille & vanille-holunderbeer
(das grundrezept stammt aus linda lomelino´s wunderbarem kochbuch "torten")

zutaten macarons-schalen:
100-110g eiweiss (wir haben genau 102g verwendet)
100g gemahlene mandeln
200g puderzucker
4 el zucker
1 vanilleschote
1,5 tl blaubeerpulver (o. pastenfarbe für die blaubeer-vanille-macarons; gibt es von der marke mill&mortar)
weiss vanille-schoko-creme:
60g weisse schokolade
1 vanilleschote
75g konditorsahne
holundercreme:
150ml holundersaft (inkl. etwas zitronensaft wer mag und darf)
65g weisse schokolade
80ml konditorsahne
1 pck agaranta

macarons-schalen backen:
eier einen tag vorher trennen und mit abgedeckter frischhaltefolie bei raumtemperatur stehen lassen.
entweder mit einer silikon-macarons-backmatte (2x stück) arbeiten oder backpapier (man kann mit einem 2euro-stück kreise mit einem bleistift vorzeichnen - etwas abstand lassen; für 2 backbleche vorbereiten).
mandeln mit puderzucker mischen und in 2 portionen in einem universalzerkleinerer o.ä. feiner mahlen und nochmals durch ein feines sieb sieben. körnige reste weglassen. eiweiss 4-5min steif schlagen und nach 1min den zucker und das vanillemark während des schlagens einrieseln lassen. mandel-puderzucker-mischung mit einem teigspatel unterheben, etwa die hälfte in eine zweite schüssel füllen und das blaubeerpulver unterheben. masse mehrmals mit dem teigspatel rühren bis er breiig und dickflüssig vom spatel läuft (aber nicht zu flüssig verrühren!). blaubeer-schnee in eine spritztülle mit rundem aufsatz (ca. 7-9mm-ø) füllen (die spritztülle mit frischhaltefolie und einem gummi o.ä. abdecken solange man die spritztülle befült) und auf das vorbereitete backpapier (oder silikon-macarons-matte) spritzen (in größe der 2euro-kreise spritzen, dann sollten sie etwas breiter verlaufen). dann den vanille-schnee rühren und ebenfalls mit einem spritzbeutel auf das zweite backblech spritzen. backbleche für 30-60min ruhen lassen bis sich eine haut auf den macarons gebildet hat. ofen auf 150grad (wir haben 140grad erwärmt - von ofen zu ofen unterschiedlich) vorheizen und ein blech nach dem anderen für 11-13min backen (nach 11min immer wieder prüfen, dass sie macarons nicht braun werden - mit dem finger leicht andrücken, wenn die oberseite sich fester anfühlt, sind sie fertig). komplett abkühlen lassen bevor man sie vom backpapier löst.
vanillecreme:
weisse schokolade fein hacken. vanillemark in konditorsahne einrühren und aufkochen, dann 1min abkühlen lassen und in einer kleinen metallschale über die gehackte schokolade giessen. masse mit einem schneebesen verrühren bis sie zu einer creme wird. creme etwas abkühlen lassen, dann in einen spritzbeutel füllen und blaubeer-macarons-hälften befüllen (macaronshälften beim zusammendrücken leicht drehen). mit etwas blaubeerpulver bestreuen und in den kühlschrank am besten über nacht stellen zum durchziehen.
holunderbeerencreme:
schokolade fein hacken. konditorsahne aufkochen, dann 1min abkühlen lassen und in einer kleinen metallschale über die gehackte schokolade giessen. masse mit einem schneebesen verrühren bis sie zu einer creme wird. jetzt agaranta in 100ml holunderbeerensaft einrühren und 1min aufkochen, kurz abkühlen lassen, dann restliche 50ml saft einrühren, dann schokoladencreme. masse abkühlen lassen bis sie fester geworden ist, dann in spritztülle füllen und vanille-macarons-hälften befüllen (macaronshälften beim zusammendrücken leicht drehen). in den kühlschrank am besten über nacht stellen zum durchziehen.
